Evil Jessica's Lime Chipotle Marinade for Jasdip

jasdip, I'm sorry this took me so long. When I get limes, I make a bunch of this and can it, Bud helped me juice all the limes the last time I made it. It's Elery's favorite marinade for lamb, and pretty good for chicken too. Jessica told me her boys used it as dip for tortilla chips! It's from Sunset magazine, originally. I make it in the food processor, although you can make it in the blender if your blender is strong enough. My immersion blender just gets the cilantro all wound up in the blades, so that didn't work well, LOL.

Jessica's Lime Chipotle Marinade

Lime Chipotle Sauce

1/2 cup honey
2 tablespoons minced canned chipotle chilies in adobo sauce
3 tablespoons brown mustard -- or Dijon
1/2 cup lime juice
1 1/2 tablespoons minced garlic
1 teaspoon ground cumin
1/2 teaspoon ground allspice
1/2 cup chopped fresh cilantro
Season with salt and pepper

Blend in food processor. Serve sauce as a marinade grilled meats, poultry, and fish if your guests don't get to it first with tortilla chips.

Makes 1 1/2 cups.

I double this, triple it, quadruple it, use however much lime juice and cilantro I have on hand. Then I can it and when I don't have fresh cilantro and limes are expensive, I open a jar, it works great.
