Replacing pipes with PEX, with future remodel in mind

We currently have the 1st floor kitchen ceiling removed, exposing all the plumbing for the master bath. We hope to remodel the master bath in a year or two, but the copper pipes show evidence of leaks by the tub and faucet. We're replacing all visible pipes with PEX this week.

My ideal plans for a bathroom remodel are more extensive than my husband's. He just wants to replace in place. I want to expand the space and relocate almost all fixtures because the bathroom is so small compared to the bedroom. I thought I'd post here in case there is something you can see that I need to be cognizant of with the pipe replacement, since we need to keep future remodeling in mind. I don't want them to do something now that would prohibit us from being able to move things around later.
