Echinacea Purpurea, tell me if I'm just being impatient.

So I bought two packages of E. Purpurea and did a fair bit of research on stratfying and starting indoors, or direct sowing in fall. I would like to know if I started them now, on about June first, if there is a chance they would be large enough to survive the winter, if I got them in the ground before frost, (maybe end October)? My concern is that they may not be large or strong enough to harden off and survive the winter.

And taking that concern into consideration, if I chose to do this ANYWAY, how best would you protect a small echi from frost if you were being impatient like me?

Third question, I have copious amounts of plain sphagnum peat moss, would this be an acceptable medium to start these seeds in? I have heard that consistent, light moisture MAY be best for them, and peat moss doesn't fit that bill, but I've not read anything at all conclusive.

I want to do it right, but I also really, really want to do it now.

I'm in 7b, Northwest Georgia.
