Homemade Cheese - Question

I've made homemade cheese using whole milk and lemon juice and it's very good. I've been thinking about whether lime juice would work just as well and if it imparts enough lime flavor to be noticeable. I've googled it and have seen where it can be used, has anyone ever tried it? I was thinking it would be good to use in an Italian-style cheesecake. I'm also wondering how much milk I would have to use to make 2 pounds of cheese, which my recipe calls for.
