Comments (13)how interesting that deborah started this thread today--thank you! there is a very small (and CRAMPED) oriental market not terribly far from us and we stopped there yesterday to look around and pick up a few things just unknown to us. it was fun! i'd never had any thai food until 2 years ago and there was a nice restaurant that had a very small buffet every day. pad thai and tom gai soup were always there and most of the other dishes changed daily. i LOVED that soup and when i spotted fresh lemon grass yesterday, decided i had to attempt making it. there are about a dozen recipes for it on the "food down under" website and they are pretty similar to the one deborah posted. having said that, i simply don't recall the taste of either something like ginger (as a sub for galangel) or chili peppers in it but guess i'd be wrong about that :) in any case, i have dried red pepper flakes, or sweet chili paste with garlic or chipotle peppers in adobe sauce that i can use (VERY sparingly in our household). anyone have any suggestions on which might work best in this recipe? and maureen--ex or no, those sound like really great memories to me! it must have been quite the adventure for all of you! Home Cookin Chapter: Recipes From Thibeault's Table ========================================================= Miques recipe (8 servings) 8 filet mignons 8 croutons Green Peppercorn Sauce (below) Pan broil or grill the filet mignons until done. Place a crouton on each of 8 warmed plates. Place a filet mignon on each crouton. Top with a generous spoonful of Green Peppercorn Sauce . Pan broil or grill the filet mignons until done. GREEN PEPPERCORN SAUCE Makes (3/4cup) 1 tablespoon butter 2 tablespoons shallot, finely chopped ¼ pound mushrooms, finely chopped 2 tablespoons parsley, minced 1 teaspoon green peppercorns, rinsed and drained Tabasco sauce 2 tablespoons brandy 1 cup whipping cream 1. Melt the butter in a small saucepan. Add the shallot and saute over medium heat until soft. Add the mushrooms and saute for 5 minutes, stirring frequently. Add the parsley, peppercorns, and 2 to 3 drops of Tabasco sauce. 2. Warm the brandy and ignite it. Pour the brandy into the mushroom mixture and stir until the flames subside. Add the cream. Boil the sauce, stirring constantly, until it thickens. Add salt to taste. This one is really good too. Home Cookin Chapter: Recipes From Thibeault's Table =========== For: Omaha Steaks Filet Mignons 2 (6 oz.) Filet Mignons, thawed 1/8 tsp. salt 1/8 tsp. freshly ground pepper 2 Tbsp. butter 1 tsp. Dijon-style mustard 2 Tbsp. shallots, minced 1 Tbsp. butter 1 Tbsp. lemon juice 1 1/2 tsp. Worcestershire sauce 1 Tbsp. fresh chives, minced 1 tsp. brandy 1 Tbsp. fresh parsley, minced . Season both sides of steak with salt and pepper. Melt butter in a heavy skillet; add mustard and shallots. Saute over medium heat 1 minute. Add steaks and cook approximately 3 minutes on each side for medium-rare. Remove steaks to serving plate and keep warm. Add into pan drippings, 1 Tbsp. butter, lemon juice, Worcestershire sauce and chives. Cook for 2 minutes. Add brandy; pour sauce over steaks. Sprinkle parsley over the top. Comments (6)I assumed if you didn't want butter-based sauces, you wouldn't want cream sauce either. You might like this one: PECAN PESTO 6 oz pecans 1 cup grated Parmesan 4 TBL chopped fresh basil 2 cloves garlic 1/2 cup whipping cream Combine first 4 ingredients in a processor. Process until blended. With motor running, add cream & process until smooth paste forms. Serve pesto over hot cooked pasta.~~Food for Thought (This can be thinned down with more cream if it's too thick for your taste.) Or there's this one that's really good with fettuccine but should work w/ravioli. (Enough for 1 lb pasta) 3 TBL olive oil 3 TBL butter 1-2 cloves garlic, minced 3-4 tomatoes, peeled, seeded & chopped 1/2 cup dry white wine 1/2 cup finely chopped fresh basil leaves 1/2 cup heavy cream Freshly grated Parmesan Heat the oil & butter in aheavy saucepan over medium heat. Gently saute the garlic for a minute then add the tomatoes, wine & basil. Simmer 5-10 minutes or until the sauce is thickened. Add the heavy cream & simmer another 2-3 minutes. Add salt & white pepper to taste. Toss with hot pasta & pass a bowl of the grated Parmesan.~~Private Collection2. GORGONZOLA WALNUT SAUCE (enough for 1 lb pasta) 4 TBL butter 1/4 lb Gorgonzola or blue cheese, cut into cubes or crumbled 1 1/2 cups half-and-half 2 TBL cognac or brandy 3 TBL tomato puree 1/3 cup coarsely chopped basil 1/2 cup broken or chopped walnuts Salt to taste 1 1/2 cups grated Parmesan Melt the butter in a saucepan & add the Gorgonzola, stirring with a whisk. When the cheese is melted add the half-and-half, cognac, tomato puree, basil & walnuts. Add the sauce to the hot pasta along with 3/4 cup ofthe Parmesan. Comments (7)Glenda is correct..this makes a BIG batch for a party. The medium picante sauce cuts any sweet taste you'd think prevails. Natch..as I said-cut recipe in half if this is too much for your needs. These freeze well, also. I made a half batch 2 weeks ago for 6 people & there were just a few left.
