Berry Jam in Half Gallon Jars for Refrigerator Storage (short term)

I have an opportunity to sell my BWB processed 4oz and 8oz jars of jam at a popular Farm-To-Table restaurant but they also want half-gallon jars to use in their kitchen with a high usage rate of 4-6 per month, never less than that. I told the owner that there are no provisions for safely canning jam in either quart or half-gallon jars to be shelf stable. She asked if I could make them the usual way (hot fruit, sugar, lemon juice, pectin) and store them when cooled in their refrigerator. Any thoughts on this? Could I make pints and BWB, cool O/N, open and dump into sterile half-gallon jars, or what?
