Armstrong and Mannington (there are more brands) make laminates are suitable for bathroom floors. We have an Armstrong 15" tile in our guest bath. It is warm to walk on compared to porcelain or stone. Backsplashes can be whatever you like. Distance to mirror is just a design thing. If you select tile, it will be determined by how many rows you want. Make a scale drawing to see how it will look. Placement of the mirror is important to determine what you want to see reflected. That looks like the convention of about 4" in the picture...maybe you could go 6" to reduce splashing--or you could go all the way to the counter if you don't mind cleaning the bottom of the mirror. I probably would not ease the top of the splash, I think I would want a straight edge-to-straight edge relationship between the marble and the mirror. I personally really like the look of boundary to boundary mirror like this (whatever the boundary may be). That is a great looking set up in your sample picture. One of my favorite small powderrooms has a counter to ceiling wall to wall mirror with a chandelier hanging in front of it. I think its clean and timeless, not d---- like some people like to call it:)

Well, I would forgo the white and have a cohesive bathroom that includes almond... It will look better than trying to "ignore" it... I happen to like almond in the bathroom and am hoping it becomes popular again...you can do gray with it, but it's not so easy. You need a warm gray paint. I like this mirror for inspiration.. Here's a pretty shower curtain with beige and gray...

the white trim prob wouldn't be much higher than the granite. (usually 4") So, if you really want higher, you could see about doing some decorative thing to make it higher, but not sure how that's going to look. A good bathroom paint on the wall, and vinyl trim piece with equally good enamel paint, should be impervious to your splashings! (I would have done a wall mount faucet. much easier to keep clean) then you could have had the granite come up about 9-10 inches. or, you could do something like this i would have forgone the wainscot on that wall and just done the tile one last pic w/the wainscot. the trim piece sits a bit higher than the countertop piece. take you pick of what you like.
