Replacing wood trim with an updated combed trim

Hey everyone, So we have slowly been plugging along on our 1959 home. Its our first home and I have really enjoyed taking to tasks and updating as we go along. With the majority of the inside done, I am looking to attack our exterior with a fresh coat of paint. Our home is primarily stucco and I would like to replace the exterior trim of the windows with something a little more up-to-date. The product I would like to use is a combed 2 inch pvc board to replace this very old and very thin looking window trim. Is there anything I should be overly concerned about? Is it as easy as taking a blade to the caulking and prying the trim out and replacing with new trim? I did this with very little issue when replacing my windows on the back of the house. This photo shows the original windows which have since been replaced with retrofits.
