Madi's Meatballs

Madi and Maci came to play with me yesterday, their Dad was having a root canal and Mom was helping her Dad at his store. Madi decided that Dad needed to have some soup, because his mouth would be sore. What kind of soup? Dad likes meat, but he can't chew it. How about something with meatballs?

She had never heard of Italian Wedding Soup and I've never eaten it or made it, but she thought it would be very cool, because it's for weddings. I'm game, so meatballs it is!

First you have to mix all the meat and eggs and cheese and stuff together. It looks pretty yucky. It feels even more yucky.

When that's all mixed, you take Grandma's good scooper, and scoop meatballs. See how easy?

Scoop them all out onto a pan, until the meat is all used up. That little tiny one is for Maci.


Then go back to Grandma's pantry and shop in her good stuff. She says we need two quarts of chicken broth that she canned, and a pint of kale. I think we could leave that green stuff right out, but she says it has to go in. Oh, and we need some pasta.

Grandma chopped the carrots because I can't use the sharp knives yet, and then she got the broth really hot and we put everything in and cooked it for a while. It looked like this:

It was very snowy and so Makayla came over to play too, it was a snow day off of school! Hurray, I love to play with Makayla. She helped me make brownies and then we made bread to go with the soup.



I had to test the bread to make sure it was good for Dad. Grandma made me a sandwich with her homemade raspberry jam, I liked it and shared it with Maci. Grandma said I had more on my face than in my tummy, but I think she was wrong.


Or maybe not.

And Daddy LOVED the soup.
