TNT Carrot Ginger Soup without Chicken Broth

I made this for our New Year's Day feast. My friend and I love carrots and she is a vegetarian. I found this recipe in one of my 300 cookbooks, but don't remember which one. It tastes delicious reheated the next day and DH said it was great cold like a smoothie, only better.

VEGETARIAN CARROT AND GINGER SOUP

In a soup pot with 2 Tb butter alternative saute 5 minutes
to soft but not brown:

2 diced onions, 2 minced garlic cloves, 2 ts salt, ¼ C diced candied ginger, 1 Tb grated fresh ginger

Add to pot : 2 pounds carrots peeled and sliced into ¼ “
thick coins, 4 C water, ¾ C carrot juice, 4 thyme sprigs, ½ ts baking soda.
Bring to boil, reduce to simmer covered 20 minutes.Take out thyme stems and put soup in a heatproof blender 1/3 at a
time to liquefy. Put back into pan and add ¾ C carrot juice, 1 Tb cider vinegar,
salt, and plenty of pepper. Reheat on medium.
