Comments (20)Linda, DD used to love when her flights through DFW put her in Terminal C. They had a cereal bar, Cereality, that served mix and match cereals with various toppings. The Sweet Potato Hash I make is caramelized onions, mixed with cooked sausage (or bacon, if I'm making it), seasoned with garlic and rosemary. It is cooked until the sweet potato chunks are tender. Then you make wells in the hash, crack in an egg, and put it in the oven until the eggs are done to your liking. Check out the recipe I linked above. It is soooo good. plllog, good point. Plans can become fluid, whether you want them to or not. Which reminds me. I need something in reserve for Saturday lunch. The Saturday buffet is an outdoor tailgating party. If it rains, we won't be tailgating. I have a pork tenderloin in the fridge that can be ready in less than an hour. This recipe for Pork Sliders with PIckled Onions and Cranberry Sauce is really good. I need to pickle some onions to be ready. I have everything else at hand. Time is getting short! First guests arrive in 2 days and I'm in the middle of finishing up a decorating project that I put on hold for way too long! Comments (31)As another side note, I have served reconstituted dried fruit compote as a dessert with a Greek meal. I topped it with warm vanilla pudding, which I made with milk, but I have also made it with soy milk. The squash gratin comes from a book my late mother gifted me, "Williams and Sonoma Vegetable" cookbook. Sort of a cross between a coffee table picture book and cookbook. It calls for "pumpkin" but I usually use another type of squash and I can rarely find good meaty pumpkins at the store. Hubbard squash would be fantastic in this dish. I think I usually make it with butternut squash though. Delicata would be an interesting experiment. Pumpkin Baked with Tomatoes and Rosemary Bake at 350 so start preheating the oven before assembling the gratin You will need an 11 or 12 inch square pan or a 13x9 inch pan. You could probably use a round pan, but you need at least 3 inches on the side of the pan. 1 baking pumpkin or winter squash, 2 lbs. 4 TBLSP extra virgin olive oil Salt and freshly ground pepper 1 yellow onion chopped 3-5 cloves garlic 2 cans, 12 oz. each, diced tomatoes (not petite diced. Stewed would even work) Pinch of sugar 1-2 tsp. fresh rosemary, minced. Use HALF of that if using dried Peel the squash and slice into 1/2 inch thick slices. Heat 3 TBLSP of the oil in a heavy nonstick pan and in batches, lightly sautee the pumpkin in single layers. Do this in batches to make sure the squash doesn't get mushed and gets evenly browned. Season with salt and pepper and transfer to a platter on hold. Add the rest of the oil to the pan and do the onions, add the garlic in the last minute or so to lightly brown and then the tomatoes. Continue to cook until it forms a thick sauce. Stir in rosemary and remove from the heat. Layer the baking pan with layers of squash topped by tomato sauce. Start with 1/3 of the squash, 1/3 of the sauce and finish with a final layer of sauce. Drizzle lightly with more olive oil. Bake until the top is lightly glazed and browned in spots and the pumpkin is tender when pierced with a knife. Should take 35-45 minutes but check after 25 minutes as ovens and squashes and pan sizes may vary. Remove from oven and cool a bit to set. Can serve warm or room temp. Not being vegan, and loving the taste of Parmesan cheese with squash, I would probably sprinkle some of that between the layers too. Comments (38)The caramel on the bottom and the cast iron skillet keep the crust from being soggy in this pie. Interesting side note, I have this recipe stored in my recipe app along with the link to the original which came from Southern Living. Instead of posting the recipe, I was going to just post the link. When I checked it to make sure the link wasn’t broken, I discovered they have totally changed the online recipe. Easy Skillet Apple Pie YIELD Makes 8 to 10 servings INGREDIENTS 2 pounds Granny Smith apples 2 pounds Braeburn apples 1 teaspoon ground cinnamon 3/4 cup granulated sugar 1/2 cup butter 1 cup firmly packed light brown sugar 1 (14.1-oz.) package refrigerated piecrusts 1 egg white 2 tablespoons granulated sugar Butter-pecan ice cream (depending on juiciness of apples, may need to add 1 Tablespoon water to apples) INSTRUCTIONS Preheat oven to 350°. Peel apples, and cut into 1/2-inch-thick wedges. Toss apples with cinnamon and 3/4 cup granulated sugar. Melt butter in a 10-inch cast-iron skillet over medium heat; add brown sugar, and cook, stirring constantly, 1 to 2 minutes or until sugar is dissolved. Remove from heat, and place 1 piecrust in skillet over brown sugar mixture. Spoon apple mixture over piecrust, and top with remaining piecrust. Whisk egg white until foamy. Brush top of piecrust with egg white; sprinkle with 2 Tbsp. granulated sugar. Cut 4 or 5 slits in top for steam to escape. Bake at 350° for 1 hour to 1 hour and 10 minutes or until golden brown and bubbly, shielding with aluminum foil during last 10 minutes to prevent excessive browning, if necessary.
