Goat Milk Peanut Butter Fudge Recipe

Several years ago we went to a neighboring county's fair and were offered some peanut butter fudge made from goat's milk in the goat exhibit building by a breeder. It was the best peanut butter fudge we'd ever eaten. Does anyone here have a tried and true recipe for it?

Wouldn't you just use a recipe that calls for milk and use goat's milk instead of cow's? Not all peanut butter fudge recipes even have milk as an ingredient - like Alton Brown - P.B. Fudge recipe - which is very good. This is the recipe I've been using since I was a senior in high school (1970).

PEANUT BUTTER FUDGE

2 c. sugar

2 T. flour

pinch of salt

5 T. peanut butter

1/2 c. milk

3 T. cocoa

1 t. vanilla

Mix all ingredients in a saucepan, EXCEPT peanut butter. Bring to boil over very low flame, then boil vigorously for 2-3 minutes. Remove from heat and add peanut butter, beat until thick. Pour in greased 9x9 inch pan. Cool.

Thank you, grainlady. I rally don't know if you'd use the same recipe as for regular milk or not. I've never used goat's milk and it is rather expensive here. It was definitely a peanut butter fudge with no chocolate. Your recipe sounds very good and I will have to try it so I'm going to copy it.. My friends can never get enough fudge.

This is easy as could be and everyone thinks you fussed. From Kraft Foods 1993 pamphlet on Holiday Desserts: One Bowl Chocolate Fudge Ingredients: 2 packages (8 squares each) semi sweet chocolate 1 can (14 ounces) sweetened condensed milk 2 teaspoons vanilla 1 1/2 cups chopped walnuts Microwave chocolate and milk in a large microwavable bowl on high for 2-3 minutes or until chocolate is almost melted, stirring halfway through heating time. Stir in vanilla and walnuts. Spread in greased 8 inch square pan. Refrigerate until firm. Cut into squares. Makes 4 dozen Options: Rocky Road Fudge: Add 1 cup miniature marshmallows with vanilla and walnuts. Peanut Butter Fudge: Omit walnuts. Drop 1/2 cup peanut butter by teaspoonfuls on top of fugde. Swirl with knife to mable-ize. Peppermint Fudge: Omit vanilla and walnuts. Stir in 1/2 cup crushed peppermint candies. Coconut Walnut Fudge: Add 1 cup flaked coconut, toasted with vanilla and walnuts. Garnish with additional coconut. I've made the regular fudge, the peanut butter chocolate and the peppermint fudge. All have gone over well. I have a brother-in-law that will hunt for the container that I bring to Christmas. He'll eat the entire container himself!

Recipe: 3 3/4 cup white sugar 1 1/2 cup light corn syrup 1 cup hot water 4 Cups creamy peanut butter Boil syrup water and sugar to 295 degrees. Spread peanut butter onto a large sprayed cookie sheet with sides. Pour hot syrup over peanut butter and fold in quickly. Turn out and roll with a rolling pin. Cut and cool completely. It seems like a simple recipe but I will tell you I have a hard time getting it too turn out right every time. I have found that using all brand ingredients works best for me: others use generic peanut butter. Also, it helps to have two people folding from opposite ends of the pan coming together. We tried making this past weekend and all batches didn't turn out completely right except one. Hopefully you are able to get it to turn out because I almost bet this is the recipe you have been searching for. Happy Candy making!

CHICAGO PEANUT BUTTER PIE 8-10 oz fudge cookies, ground fine 1/3 cup sugar 1 stick butter, softened 8 oz pkg cream cheese, softened 1 cup chunky peanut butter 1 cup confectioners' sugar 1 cup heavy cream, whipped Preheat oven to 350Â°. combine the cookie crumbs, sugar & butter until well blended. Press the mxiture onto the bottom & up the sides of a 9" pie plate & bake 15 minutes. Cool. In a processor, combine teh cream cheese, peanut butter & confectioners' sugar. Process until almost smooth. Gently stir in the whipped cream & pour into the pie shell. Chill.~~One Magnificent Cookbook PEANUT BUTTER PIE WITH PRETZEL CRUST (MUST make ahead.) Pretzel Crust 3/4 cup finely crushed pretzels 3 TBL granulated sugar 6 TBL butter, melted Combine the pretzels, sugar & melted butter, mixing well. Press firmly onto the bottom & up the sides of a 9" pie plate. Bake in a preheated 350Â° oven for 10 minutes. Mine's a little different than Glenda's but basically the same. I'm not a big peanut butter fan but this is so creamy and good I could eat the whole pan. PEANUT BUTTER FUDGE 2 c. sugar 2/3 c. milk 1 jar marshmallow creme 1 c. peanut butter 1 tsp. vanilla Cook sugar and milk to soft ball stage. Remove from heat. Add remaining ingredients, mix well and pour into a 6 x 10" pan. Makes 3 lbs. You can roll into balls and dip in melted almond bark or chocolate coating.

I did a little more looking for recipes this morning and the ones I found using goat's milk were not dissimilar to the recipe I gave above, other than they made more, so the ratio of ingredients was different. I happen to use (farm fresh) goat's milk for making kefir and yogurt when I can find a good source for it. The boxed commercial brand in the dairy case doesn't really taste all that much different from cow's milk, and I just don't really think the flavor of the fudge would be all that influenced by the use of goat's milk over cow. Where you might find a different flavor would be using canned goat's milk (evaporated). I found this recipe using Meyenberg canned goat's milk on their web site. It's a common item in our stores, as is powdered, and cartons in the dairy case.
