Supper Time on Tuesday!

I have no idea what I will find to munch on tonight. I have been gone all day and I am not too hungry. He is having oatmeal and applesauce. How about you, what are you feasting on this evening?

Another potato casserole--the best thing ever for cold weather. I used left-over sliced baked potatoes, frozen peas, diced sausage, onion, granulated garlic, shredded cheddar cheese, sour cream, and enough milk to cover the potatoes. Basil, salt and pepper to taste, and more cheese on top. I had part of a sweet red pepper left from something else, so I sliced it thinly and made a 'pinwheel' on top of the cheese.

I have strawberry oat bars almost ready to come out of the oven.

We are going out for supper tonight for my daughter's birthday meal. My youngest turned 17 yesterday but decided to wait for her meal until her older sister arrives home from college in about an hour and a half. The bad thing is, she hasn't decided where she wants to go.

Tuesday is sandwich night. I made gluten-free dill/onion sandwich rounds this morning and sloppy joes (with ground turkey) for dinner. We'll have open-faced sloppy joes (toasting 1/2 a bun each) and will top the sloppy joe with shredded cheese. Carrot, celery sticks, and bread and butter pickles (we ate our greens for lunch) and a baked apple for dessert. I also made some sweet potato chips in the microwave.

We were under the weather, tornado weather that is.... (although thankfully all we got was wind and rain). So I made something early in the afternoon that was portable in case we had to eat in the basement. I made a roast beef wrap (gluten-free) with chili lime mayo, pepper jack cheese and fresh leaf lettuce from the garden. As a side dish I made a pasta salad with the cutest little gluten-free pasta O's (anellini) - a little pasta and LOTS of veggies dressed with Olive Garden Light Italian Dressing and a couple shakes of McCormick Salad Supreme. Baked Crushed Pineapple for dessert.

Egg fu yung!! Yum! That is my most favorite Asian dinner item........not bad for brunch, either :-) I have made it several time myself but it never quite matches the deliciousness of the Chinese take-out kind. Unfortunately, the only decent Chinese restaurants in the vicinity are at least a half hour drive and a ferry ride away. I will often pick up an order to go when I am over on that side. Oddly, we have all manner of great ethnic restaurants where I live - Thai, Indian, Vietnamese, Japanese, Greek, Italian, Mexican by the bucketful - but NO Chinese!! What's up with that?? I fixed spaghetti and meatballs with jarred marinara and frozen meatballs :-) Fast and easy but more leftovers than I need!

Only me for dinner tonight. Earlier I thought I would make a tuna salad with apples and put it on Romaine lettuce, but I had a pretzel at the mall mid afternoon which spoiled my appetite. Starting to get a little hungry after reading this thread. Trying to get motivated to prepare something to eat.

My feast was homemade split pea soup, along with a toasted cheese sandwich. Went looking for something in my freezer and found a loaf of Ezekiel bread. Doesn't take a lot to make me happy. Surely was good to make my toasted cheese with. Meals on Wheels had brought me a couple of Milano cookies today. That was my dessert. Thank God for MoW.

Well for lunch, I had Mrs. Murphy's Meatballs. They are a kind of porcupine meatball I found online with onion, cabbage, celery, green pepper and rice in the meatballs. I used Campbell's Vegetable Beef soup (ABC noodles) rather than the tomato soup to cook them in. I like that flavor better, which a friend used in her porcupine meatballs eons ago. You put them in the frying pan with the soup and a 1/2 can water raw. Cook them 45 minutes on low, turn them over for another 45 minutes, add a little more water if necessary. Nice lunch.

Monday night we had 5 guests over for dinner. The menu was:

Appetizers: Three cheeses, olive assortment, smoked salmon dip.

Spring Leaf Salad with blue cheese crumbles and a balsamic vinaigrette

Curried squash soup. Roast pork tenderloins, Broccoli-Cauliflower Au Gratin, Cornbread Casserole, and a pretty good store-bought Tiramisu for dessert.

Tonight was various leftovers from last nights meal.

Ever since socks posted about seeing the pizza whenever she came to the KT, all I see is her post about the pizza....never noticed by me until she complained!

So I had to get pizza out of my system last night, lol. Thanks, socks.

Ours was made with a garlicky white sauce, topped with shrimp, a few chopped onions and sweet red peppers, hot pepper flakes, and mozzarella. We had a salad with supper, too.

I made a big pot of pork barley soup last night. Hit the spot when hubby got home from working outside in 17 degree weather all day.

I just added patty melts to my next menu plan. Those sound so good right now. Thanks, raven.
