Well, gee, I'm not sure why anybody would marry a guy who doesn't like garlic (LOL) but since you already took that plunge, I guess we have to try to help you feed him! Maybe sit down with him on the couch some night with one or two (don't scare him) cookbooks or a cooking magazine and ask him to pick a new recipe for you to prepare. Here's a recipe that was a big hit on the cooking forum - I think you could just omit the onion/shallot - I think the mustard/worcestershire would be enough flavor. MQ's Steak Diane for Two Mark Bittman, New York Times 2 6-ounce beef fillets, cut from the tenderloin (filet mignon), preferably not too lean Salt and pepper 1 tablespoon extra virgin olive oil 2 tablespoons butter 1 tablespoon minced shallot or onion 1 teaspoon Dijon mustard 1 teaspoon Worcestershire sauce, or to taste (I added 1/2 t. extra because dh likes it) ½ cup heavy cream or half-and-half Lemon juice to taste, optional Chopped fresh chives or parsley leaves for garnish. 1. Flatten fillets a bit with the palm of your hand, the back of a skillet or a small mallet; they should be about 1 inch thick. Sprinkle with salt and a lot of pepper. In small skillet, preferably one just large enough to hold fillets, combine oil and tablespoon of butter over medium-high heat. When butter foam melts, sear steaks on both sides, just until browned, no more than 2 minutes a side. Remove to platter. 2. Wipe pan clean with towel; add remaining butter over medium heat, with shallot or onion. Cook, stirring occasionally, until tender, about 2 minutes. Stir in mustard, Worcestershire and cream. Add some salt and a fair amount of pepper. Stir once or twice, then taste and adjust seasoning. 3. Keeping mixture at a steady simmer, return meat and accumulated juices to pan. Cook, turning two or three times, until meat is done to your liking, just 1 or 2 minutes a side for medium-rare. Remove to a plate, and add lemon juice, if using, salt and pepper to the sauce as needed. Spoon sauce over meat, garnish with chives or parsley, and serve. I'm sure if you introduce something new to him once in a while, don't overwhelm him, just once in a while.....he'll learn to expand his tastes. Maybe make his favorite burger and introduce him to some new and different vegetable casserole or different potato recipe. My DH doesn't enjoy a lot of the foods that I do but I still make some dishes mainly for myself - he knows that he doesn't have to eat it, but he's usually willing to give it a try. Some are winners and some aren't :-)

Much easier than I expected! Traditional Hummus Cover 1 cup dried chickpeas with water and soak overnight. Drain and place in a sauce pan with 1/2 teaspoon salt and water to cover. Bring to a boil, lower the heat, and simmer until tender, about 1 hour. Drain and reserve the water. Place the chickpeas in a food processor with the juice of 2 lemons, 3 minced garlic cloves, and 2 or 3 tablespoons of the cooking liquid. Process until smooth. Add 1 tablespoon olive oil, 1/2 cup tahini, 1/2 teaspoon ground cumin, and salt & pepper. Process. Transfer to a bowl and sprinkle with 2 tablespoons chopped parsley. (I first drizzled some good olive oil over the top before sprinkling with the parsley.) Serve with toasted pita. You can substitute one 16-ounce can of chickpeas for the dried. Yield: about 1-1/2 cups. I've been using this recipe for years: Red Beans & Rice 1 ham bone 1/2# ham, cubed 1# dried red beans 1 large onion, chopped 1 c. chopped green onions, tops & bottoms 1/4 c. chopped bell pepper 1/4 c. chopped parsley 1/2 t. basil 2 bay leaves 1/4 c. butter Salt & cayenne pepper to taste *I aways add lots of garlic to this recipe Put beans in a heavy pot w/ enough water to cover; bring to a rolling boil for a couple of minutes, then soak overnight in that same water. In the morning, bring to a boil again & add all the other ingredients. Reduce heat & simmer for at least 3 hours. The ham bone is important for flavor. Be sure beans are not old. They should become very creamy, but most will remain whole. Add cold water as needed. Goes well with smoked sausage & sliced raw onions. ***[Rice cooking instructions that I've never followed but including it because it's part of the orig recipe.] Serve over fluffy long grain rice cooked as follows. Bring 3 quarts of water to a rapid boil. Add salt, one tablespoon of oil and one of vinegar, and one cup of rice. Oil will keep water from boiling over and vinegar will let each grain of rice falls to itself. Reduce heat and simmer exactly 18 minutes. Drain in a colander, rinse off excess starch with cold water and steam in colander until well warmed again. This is a very good recipe, very much like the red beans & rice that I ate in NOLA. Saute onion & leek until tender. Add green beans, butter beans, potatoes, tomatoes with liquid, & chicken stock. Cover & bring to boil. Reduce heat & simmer 15 minutes. I eat beans almost every day, so every day is bean cookalong for me! What I'd like to make is hummus starting from scratch with dried garbanzo beans. I've only ever made it with canned before. I saved the hummus thread so that's where I'll get my recipe. Right now I've got two bowls of butterbean soup to finish, and then I'll probably make this soup out of my "Cucina Ebraica" cookbook by Joan Nathan. It is very, very similar to the other bean soups listed, and pretty typical of the kind I usually make, with the exception of adding the fake meat crumbles. Pasta e Fagioli alla Veneta - Venetian White Bean Soup with Pasta and Beef Sausage Serves 6 1 3/4 cups (~14 oz.) dried white or borlotti beans, picked over and rinsed. (I'll use canned canelinni beans this time) 4 TBLSP EVOO 2 onions, finely chopped 2 celery stalks, finely chopped 2 carrots, peeled and finely chopped 3/4 lb. freshly made or purchased fresh fettuccine, cut into maltagliati (irregular 1 1/2 inch pieces) (I bought tiny penne for this instead, dried. I can't afford fresh pasta and I don't make it.) About 2 cups meat broth (I'll use veggie broth) 1/2 lb. meat mixture for beef sausage, rolled into tiny meatballs. (You're on your own with this, I'll use 1/2 lb. fake meat crumbles or fake italian sausage cut up.) The mix Joan mentions included boneless beef shoulder, finely ground, 1/2 lb. beef kidney fat (whatever THAT IS), and lots of spices. Maybe chuck that and just buy some italian sausage and cut it up. Buy all beef if you want to stick to the original Jewish origins of this dish. Salt and freshly ground pepper to taste. Cook beans as you usually do for dried beans (in my case that means soaking in 2 times their volume of water overnight and then draining). Add fresh water to cover and bring to a boil. Meanwhile, sautee the onions, celery, and carrots in 4 TBLSP of olive oil until softened, about 10 min. Add to the beans and return to a boil. Cover and reduce heat and simmer until beans are tender, about 1 1/2 hours. If you're making this with canned beans, you can skip the cover with water and bring to a boil part, and just add the beans after you've sauteed the vegetables. Then add the vegetable broth to cover all the soup ingredients. Also, I would suggest adding 1 tsp. of italian seasoning unless you are using a spicy italian sausage in the soup. While the soup is simmering, bring a pot of water to a boil and cook the pasta. Also, scoop out half the bean mixture and puree when the beans are sofrt(I just run the hand blender for a couple of seconds until half the soup is pureed, or mash with a potato masher a bit). The recipe says bring the meat broth to a boil and cook the meatballs. If you're doing meatballs you're on your own as to how you make them, but they need to be the small ones. Add the meat broth and meatballs to the soup and simmer 10 more minutes for flavors to meld. (In my case it will be add the fake meat and some additional broth to cover.) At the very end, add the pasta and 2 cups chopped cooked swiss chard or curly endive to the soup. (Yeah right. I just toss in some frozen chopped spinach and cook until it is defrosted and heated through). Before serving, season with salt and pepper to taste. You can also use tubetti pasta in this soup. I couldn't find tubetti which is why I bought the tiny penne. The last recipe I'll share is from my friend Carolyn. I've been craving it, but I have a ton of other food to use up in the fridge so probably won't get to it this cookalong. But it is definately worth trying if you're up for something adventurous and want to expand your bean repertoire. Carolyns' kids are quite picky yet they like this, although they have been raised vegetarian so they love pasta. Definately for cilantro lovers though, that's what makes the dish. Carolyn's Yummy Sauce 1 can of white beans 6 garlic cloves pressed (I use 3) 2 TBLSP fresh ginger, grated 2 cups fresh cilantro (basically one bunch) 1 TBLSP chinese sesame oil 1 TBLSP hot chili oil (1/4 tsp. cayenne pepper dissolved in 1 TBLSP sesame oil). Pour over hot pasta and heat additionally in a pan if necessary to heat through. Garnish with chopped scallions, sesame seeds, chopped peanuts or diced cucumber if desired. This is great with fusilli, shell shaped pasta, or cavatelli, or orichiette or those snail shaped ones, lumache or whatever they are called. I add a small amount of finely chopped steamed broccoli to this or spinach, or sauteed red pepper, if I am in the mood but it is not necessary. I just saute a sliced onion till softened, add the garlic and saute for a minute more, then add either fresh, which is best of course, or canned green beans and small or quartered large new potatoes. Add enough water or veggie broth, or broth of your choice, to cover, and let cook slowly till tender and the liquid has reduced a bit. Salt and pepper and butter to taste. I also like to just quick cook fresh green beans till al dente, either by steaming or sauteing, and top with a Lemon-Shallot Vinaigrette. I have to confess...one of my favorite things to do when I don't feel like cooking is to toss a can of black beans or pinto beans and a can of Chile Fixins Rotel together, with some chopped onion and sometimes a diced clove of garlic, and some chopped cilantro if I have some on hand. This recipe posted here by AdrienneLIQ is one of our favorites. When I make a casserole of beans, it's usually served as the main course rather than a side dish. TUSCAN BAKED BEANS Ingredients: 1 lb dried cannellini beans 4 T EVOO 2 cloves garlic, crushed 4 oz. Pancetta, roughly chopped 3 leaves fresh sage (if fresh not available, use 4t chopped fresh parsley). 1 Leek, finely sliced 1 14 oz. can plum tomatoes, chopped with their juice salt and freshly ground black pepper. 1. Carefully pick over the beans, discarding any stones or other particles. Place the eans in a large bowl and cover with water. Soak for at least 6 hours or overnight. Drain. 2. Preheat the oven to 350. In a small saucepan, cook pancetta until crisp. Remove pancetta from pan and set aside. Heat the oil and sautee the garlice cloves and sage leaves for 3-4 minutes until garlic is tender but not brown. Remove from the heat. 3. In a large deep baking dish combine the beans with the leek and tomatoes. Stir in the oil with the garlic and sage. Add pancetta. Add enough fresh water to cover the beans by 1 inch. Mix well. Cover the dish with a lid or foil, and place in the center of the oven. Bake for 1 3/4 hours. 4. Remove the dish from the oven, stir the beans, and season with salt and pepper. Return the beans to the oven, uncovered, and cook for another 15 minutes, or until the beans are tender. Remove from the oven and allow to stand for 7-8 minutes before serving. Serve hot or at room temperature. **For vegetarian version, simply omit the pancetta. For 'everyday' baked beans, I use this recipe. They're better when made ahead and reheated with some additional water to thin out the sauce. BAKED BEANS 1 lb. Great Northern or navy beans, soaked overnight in cold water 1 cup chopped onions 4 slices bacon, diced 2 Tbs. white sugar 1 Tbs. dry mustard 1/2 tsp. cayenne pepper 2/3 cup molasses 2 Tbs. cider vinegar 1 1/2 cups tomato juice 1 cup water Salt to taste Drain beans and add fresh water. Simmer until beans are almost tender. Drain. Combine remaining ingredients and add to beans. Bake uncovered in bean pot or deep casserole at 250 degrees for 4 hours or until very tender. Check them every once in a while and add more water to keep them from drying out. I have made nearly every bean recipe in Molli Katzen's Vegetable Heaven cookbook because that woman know what to do with them. Here are two recipes from her book that I have made many times. FIRECRACKER RED BEANS (6-8 servings) 2 Tbs. olive oil 3 cups finely minced onions 2 Tbs. minced fresh ginger 2 tsp. fennel seeds 2 Tbs. minced garlic 1/2 tsp. allspice 1 tsp. dried thyme 1 1/2 to 2 tsp. salt 1 cup dry sherry 2 Tbs. prepared mustard 1/4 cup ketchup 1 tsp. minced chipotle chiles 1 cup water 1/4 cup almond butter 2 Tbs. brown sugar 1/2 cup boiling water About 6 cups cooked small red beans or kidney beans (3 or 4 15-ounce cans, rinsed and drained) Wedges of lime Heat the oil in a large, deep skillet or Dutch oven over med-high heat. Add the onion, ginger, and fennel seeds, and saute for about 5-10 minutes. Turn the heat down to medium, add the garlic, allspice, thyme and 1 1/2 tsp. salt. Cover and cook over medium-low heat for about 3 minutes. Stir in sherry, mustard, ketchup, chipotles and 1 cup water. Cover and cook for another 10 minutes. Place the almond butter and brown sugar in a small bowl. Add the boiling water and mash with a spoon until it becomes a uniform mixture. Stir this into the sauce and cook uncovered over low heat for about 5 minutes. Preheat the oven to 325 degrees. Place the beans in a 9 X 13 inch baking dish or equivalent casseerole, and pour in all the sauce. Cover with tight-fitting lid or foil and bake for 1 hour. Remove the pan from the oven and let it sit for about 15 to 20 minutes, still tightly covered, so the beans can continue to absorb the liquid. Serve hot or warm, with squeezable wedges of lime on the side. Notes: You can make the sauce a day or two before serving and keep in the refrigerator; then combine with the beans before baking. Add 15 minutes baking time. The sauce can also be pureed in the blender before pouring onto the beans but I like it chunky. TUNISIAN TOMATO SOUP 1 to 2 (15 oz.) cans chickpeas, drained and rinsed 1 cup uncooked lentils (any kind), rinsed and picked over 7 cups water 1 cinnamon stick 2 Tbs. olive oil 4 cups finely minced onion 2 Tbs. minced garlic 2 tsp. salt 1 tsp. tumeric 1 1/2 tsp. whole cumin seeds 1 1/2 tsp. ground cumin 1/4 tsp. ground coriander 2 large or 3 small bay leaves Approx. 6 cups water, chicken broth, or vegetable broth 1 20-oz. can crushed tomatoes Black pepper and cayenne to taste 3 Tbs. fresh lemon juice (or to taste) Cook the lentils with 7 cups of water or broth and the cinnamon stick until tender, about 30 minutes for gray lentils or about half that time for red lentils, which I prefer for this soup. Remove and discard the cinnamon stick; drain lentils, saving the cooking water. Meanwhile, heat the oil in a soup pot or Dutch oven. Add the onion, garlic, salt, tumeric, ground and whole cumin and coriander, and saute over medium heat for 6 to 10 minutes, or until the onions are slightly softened. Add 6 cups of water or broth (including the reserved cooking water from the lentils, if any is left) and the tomatoes, and bring to a boil. Lower the heat to a simmer, partially cover, and cook for another 15 minutes of so. Fish out and discard the bay leaves. Stir in chickpeas and lentils, and cook for only about 5 minutes longer, so the legumes don�t get mushy. Season to taste with black and cayenne pepper and lemon juice. Serve hot, topped with some yogurt and fresh chopped mint, if desired. She dubbed it 'Spanish Green Beans' because it is much like her Spanish Rice recipe. No specific am'ts. It's one of those wing-it type recipes. Anyway, it goes like this: Jerry's Spanish Green Beans Saute some chopped bacon (3-4 strips) to desired degree of doneness. Remove the bacon & discard most of the fat, leaving 1-2 T. Add chopped onions to the bacon fat & saute til soft. In a casserole dish, empty a couple of cans of green beans. Stir in reserved bacon & sauteed onions. To this, add some tomatoes. Doesn't really matter--she used home canned tomatoes. OR, a couple of small cans of tomato sauce is very good. I kinda' prefer using the tomato sauce. Alternatively, a combination of tomatoes & tomato sauce makes for a prettier dish & is very good. [Garlic is a nice addition.] Cover the dish & bake in oven. I often cheat & use the microwave, but the results are better if you cook it in the oven. I've always used canned products for this, probably because it's a hearty winter-type dish. Being single and working I don't have time for anything these days. With beans I like to work with smoke, heat, and sweet for flavoring. For smoke I use ham, smoked poultry, or liquid smoke. For heat I use red cayenne and habenera with green jalapeno and serreno peppers used pretty much chili only. The red peppers seem to tickle my taste with bean dishes. For sweets I work with brown sugar, onions, garlic, molasses, and maple syrup. To me onions and garlic are fairly potent sweeteners when cooked with beans. I've had lots of fun with variations on bean soup. My current favorite is a mixture of black beans and kidney beans in a ham broth with cayenne... chopped cabbage optional. Hot and smokey. Lentils I've fallen in love with adding spinach to the soup. Gives the soup a green tint and flavor. White beans (navy/great northern) I've been enjoying as a side dish. I was making bean soup when I got hungry and scooped out a bowl of just done beans. I had flavored the cooking water with a couple drops of liquid hickory smoke but added nothing else. They were delicious and I drained the cooking water so the rest of the beans could be eaten as just beans. Dry beans are one of the best bargins on my grocery bill! My pantry has a few pounds most all of the time. At the moment I have black, navy, and kidney beans, as well as green peas and lentils. Peas soup is wicked with a single slice of habenera pepper added to the pot. Amazing how many people I meet that have never had pea soup! And I added a bay leaf and 1.25 tsp. of Penzey's "Tuscan Sunset" to the soup. Oh, and I used a red onion because I had half of one I had to use up, and I threw in one wilting roma tomato. And I used canelinni beans because I have never seen borlotti beans. For someone who is of N. Fill a bowl with cold water and ice cubes. Bring a large pot of water to a boil and add the lemon juice. Drop in the beans and cook for 4 to 5 minutes, or until beans are bright green. Drain the beans in a colander and then plunge them into the iced water. Drain again and set aside. In a skillet, cook the bacon until very crispy, crumble and set aside. Saute the bell pepper and onion in the hot bacon fat for 2 minutes. Add the beans, cashews, and bacon to the skillet. In an oven-proof Dutch oven, bring the kielbasa and onions to a boil with water to cover and boil for 2 minutes. Drain. Put the remaining ingredients in the Dutch oven with the kielbasa and onions. Mix well. Cover and bake for 1 1/2 hours until the mixture reaches the desired thickness. Serves 8-10. NOTE: Can also be prepared in a Crock Pot. Prepare up to baking and place in Crock Pot on LOW and heat for 6-8 hours. The original recipe comes from Mayo Clinic, but Elery added the jalapenos and he adds cumin to everything, I swear. The bean cakes are easy, drain and rinse two cans of black beans, mash them roughly with a fork or potato masher. Add a couple of cloves of mashed/minced garlic, some chopped green onion, maybe 1/2 cup of cilantro and a tsp. of cumin. Elery adds jalapenos to his but he made mine before he put jalapeno in the rest of them. Shape the mixture into patties and put them in the refrigerator for an hour or so to firm up. Heat a couple of tablespoons of olive oil in a pan and fry the bean cakes until they are browned and crunchy on both sides. We had ours topped with soft eggs, he had salsa. Not me, mine were just bean cakes, no jalapenos and eggs. I don't know how he can eat that stuff first thing in the morning, he always covers his eggs with Sriracha if we're having omelettes! I've read it is not good for cheesecake but I don't make cheesecake anyway. I have seen recipes for cheesecake using it in Cooking Light magazine, but I dunno if the recipes are any good. Probably not good in danish and the like either. I use it mostly to spread on bagels and toast and english muffins, in which case it tastes just fine. I top it with a dab of homeade jam, yum. Great with lox, since that has a strong taste so I don't miss the extra taste for that application. Fine with those dream eggs, because they were flavored with the herbs anyway, and the neufatchel just added a wonderful creamy texture, even with 1/3 less fat. Since cream cheese is almost pure fat, 1/3 less doesn't make it a diet food by any means, but I like it just as well if not better than cream cheese for what I use it for, so that's what I buy for the calorie savings. I don't mind it in party spreads either. Note: I made a double batch and baked it in a round cake pan with a "releaser" bar that spins around the bottom to prevent sticking. But, my little grandson (a month away from 3 yrs. old) and I did get started on Nate's carrot cake cookies, but since we didn't finish making the dough until an hour before his bed time, and the dough has to chill at least an hour, it'll be tomorrow before we bake them and do the cream cheese part. It doesn't matter. Both DGS and I had a great time mixing up the batter. He got to taste the flour, the sugar, the butter, and all the other ingredients as they went into the mix. Salmon Kedgeree English origin, this recipe was found in the Sunday Family Weekly magazine years ago. 1 7 oz. can salmon, or 1-2 foil packages of flaked salmon, or leftover cooked salmon 3 hard boiled eggs 1 1/2 cups onion, chopped 1/2 to 1 teaspoon curry powder 2 tablespoons butter 2 cups hot cooked rice 2 cups thawed frozen green peas 1/3 cup chopped fresh parsley salt and pepper to taste Drain and flake the salmon if using canned, reserving liquid. Add water to drained liquid to make 1/3 cup. Slice eggs in half; chop the yolks and cut the whites in strips. (I just chop the whole eggs, largish dice.) Saute the onion and curry in the butter in a skillet. Add all the rest of the ingredients (except the separate yolks and 1 TB of the parsley) including the salmon liquid/water. Add salt and pepper. Heat well, taste to correct seasoning if needed, stir well. Mound on a platter. Sprinkle with the (yolks) and remaining 1 TB parsley. Serve hot. Serves 4-6 And, a recipe to serve over rice from my dear mother-in-law: Quick Chicken Chasseur serves 6 1 lb. boneless, skinless chicken or turkey, cut into strips 1/3 cup cornstarch 1/4 cup vegetable oil 1/2 teaspoon each fresh tarragon and thyme 1/4 teaspoon pepper salt to taste 1 cup sliced scallions 1 1/2 cup chicken broth 1/2 cup sherry - dry not sweet 1 cup sliced fresh mushrooms 3 small tomatoes, quartered 3-4 cups hot cooked rice Dredge chicken strips in cornstarch. In a skillet, brown the chicken in the oil. Stir in the seasonings and scallions. Cook 2 minutes longer. Add the broth and sherry. Cover and simmer 10 minutes. Forbidden Rice Salad Serves 8 to 10 2 cups forbidden rice (black rice) 3 1/2 cups water 2 tablespoons tamari soy sauce 3 tablespoons toasted sesame oil - Recipe calls for Sesame oil; depending on how strong it is, I might use part mild olive oil or other oil - I start with 2 TBLS and add more if needed 1 pound sweet potatoes, roasted and diced 3/4 cup diced red bell peppers 3/4 cup diced yellow bell peppers 1/2 bunch sliced green onions (about 3 or 4) Sea salt, to taste Ground pepper, to taste Bring rice, water and a pinch of salt to a quick boil, cover and lower heat to a simmer for 30 minutes. Turn heat off and let rice sit while you whisk together sesame oil and tamari. If necessary, drain any remaining liquid from bottom of saucepan. Add sesame oil and tamari mixture to saucepan and toss with rice while still warm. Let cool, then add sweet potatoes, red peppers, yellow peppers, green onions, salt and pepper to taste. It makes A LOT. I make the basic recipe, divide into smaller containers, toss in different add-ins for each container. It freezes beautifully & we've always got a nice variety of different rice dishes available. Some, depending on your add-ins, make a good base for a cold salad. RICE PILAF WITH VARIATIONS 8 tsp. butter 2 c. orzo 3 c. long grain rice (we use basmati) 1 tsp. salt 2 tsp. ground black pepper 10 c. chicken broth Add-Ins (obviously not everything in one batch - lol): Golden Raisins Thyme, rosemary, sage, basil Onions Prepared Seasoning Mixes Spinach Mushrooms Pistachios Walnuts Pumpkin Seeds Large Slice of Orange Zest (add while warm) Mandarin Oranges Shallots Saffron threads soaked in 1/4 cup water Scallions sliced on the diagonal Dried Cranberries Parsley Sliced Almonds Melt butter over medium heat in large saucepan. Stir in the orzo & rice. Sautee until golden brown. Add the salt and pepper. Add chicken broth to rice mixture. Photobucket Photobucket 8 stalks asparagus, trimmed olive oil 1/2 red bell pepper, chopped 1/2 green bell pepper, chopped 1/2 yellow onion, chopped 1 stalk celery, chopped 1 carrot, peeled and shredded dash sriracha 2 packages brown and wild rice with quinoa, cooked according to package 1 tbsp soy sauce 1/2 inch ginger, peeled and minced 1 clove garlic, minced salt and pepper to taste Preheat oven to 400F. Massage a bit of olive oil into the asparagus, enough to make them shine. Sprinkle a little salt and pepper and roast for 8-10 minutes, until fork-tender. When cool enough to handle, cut into 1 inch pieces. Meanwhile, drizzle a little oil in a large frying pan and bring to medium high heat. Add peppers, onion, celery, and carrot, and cook until tender and onion is translucent. Add brown and wild rice with quinoa, sriracha and soy sauce and stir fry about 5 minutes. Add garlic and ginger, let cook for 30 seconds, then add salt and pepper to taste and gently fold in asparagus. I tried it once on top of the stove and threw it out. We like small chunks of onions, carrots and celery in the bottom of a casserole dish. Mix 1 1/2 cups brown rice into it and pour 2 1/2 cups chicken broth over top. I use either a pepper medley type seasoning or my all-purpose kind of a southwestern flavouring. (Has paprika, cumin, chili powder, garlic powder etc etc). Bake in a 375 degree oven about an hour. I didn't know that you had done it back then, and I'm not surprised. This is a recipe that I used to make decades ago. I started making it again recently and we really enjoy it. The sausages are the little breakfast, link sausages, etc. Some are sold here frozen, under the name Mini-Sizzlers made by Schneiders. There used to be 16 sausages in the package, now there are 12!! Mushrooms can be added as well, if you like. I don't buy mushrooms all that often as hubby doesn't like them, but he does pick them out if I use them. Polynesian Sausages 1 lb little breakfast sausages, fresh or frozen 1 medium green pepper, sliced 2 stalks celery, thinly sliced 1 small onion, diced 14-oz can pineapple tidbits sliced mushrooms 1/4 cup vinegar 1 tbsp soy sauce 2 tbsp cornstarch 14 cup brown sugar In a lightly greased skillet, brown sausages over medium-low heat. Remove from pan and drain all but 2 tbsp fat. Add green pepper, celery, onion and mushrooms. Saute until lightly browned. Drain pineapple chunks, reserving juice. Add pineapple to vegetable mixture. Combine juice, vinegar and soy sauce and mix with combined cornstarch and brown sugar. Slowly add to skillet and stir until thickened. We have it quite often as a side and occasionally as a main course. Chicken Fried Rice ================== This is my version of my favourite style of fried rice. Does not contain soy sauce. Before cooking, the chicken is marinated in a little Shao Hsing, cornstarch, and sesame oil. Optional: egg white . 2 to 3 boneless chicken breasts thinnly sliced 1 cup peanut oil Cooked Rice 1 large onion cut in half and then sliced lengthwise. 2 stalks celery sliced 1 garlic clove 1 inch piece ginger 1 bunch green onions 2 to 3 cups fresh bean sprouts 2 eggs beaten and seasoned with salt. Cook two or three thin omelettes - crepe style. Slice. Handful frozen peas Sesame Oil Cook chicken first. Velveting: Heat 1 cup of peanut oil in large wok. When oil is really hot add half the chicken. Chicken cooks quickly in the hot oil. Stir so chicken doesn't stick together. Chicken will turn white and be cooked in about 60 to 90 seconds. Remove chicken to a colander to drain and cook second batch. Set chicken aside. Wipe wok clean, heat over high heat, add a little peanut oil. Add onions and stir until onions start to colour. Add the celery, cook for a minute or so, add the garlic, and ginger. Add the chicken back into the pan along with the rice, toss continuously until rice is hot. Season with a little more sesame oil. Stir in the egg, green onion and bean sprouts. Here is a recipe for a savory risotto from southern India. Kedgeree that Theresa posted originated during the British colonial times in Indian sub continent. "Kichiri" as it is known in man parts of India is basically a cooked dish of rice and lentils with vegetables etc. Pongal is a south Indian version. PONGAL (this is the savory version. There is also a sweet dessert version that is made with palm sugar) Ingredients 1 cup white rice. Short grain rice that is more sticky works well. 1/2 cup yellow mung dal (split and skinned dal) 1 teaspoon finely chopped ginger 1/8 teaspoon asafoetida 1 teaspoon whole pepper corns 1 teaspoon cumin seeds 1 teaspoon black pepper powder 4-5 curry chopped leaves (when chopped releases essential oils) 2 tablespoons halved cashew nuts 2 tablespoons ghee or clarified butter (climber 3 tbps of unsalted butter until it is the color of pale honey. 2 tablespoons oil Salt to taste Heat a pan on medium heat and roast the yellow mung dal until a lightly roasted aroma is released. Don't let it turn brown or burn. Wash rice and mix with the roasted dal. Add 4 cups of water and salt to taste. Cook using the pressure cookeror in a pot. This will cook soft like almost a thick oatmeal. Place a small heavy bottomed pan on medium heat; add the oil and roast the peppercorns for a few seconds. Add cumin seeds, ginger, curry leaves, pepper powder, asafoetida and saute for a few more seconds. Turn off heat and set aside. Now heat 1/2 teaspoon of ghee in a small pan and roast the cashew nuts until pale golden and crisp. Once the rice-dal mixture is cooked; add the roasted spices and the cashew nuts to the rice-dal mixture. Add the remaining ghee and mix till the spices have blended well into the rice. Ghee enhances the flavor of this dish. Wild Rice Salad Ina Garten 1 cup long-grain wild rice 2 1/2 tsp kosher salt 2 navel oranges 2 tbsp olive oil 2 tbsp fresh orange juice 2 tbsp raspberry vinegar 1/2 cup green grapes, cut in half 1/2 cup pecans, toasted 1/4 cup dried cranberries 1 scallion, white and green parts chopped 1/2 tsp ground black pepper 1. In a medium saucepan over high heat combine rice, 4 cups water, and 2 tsp salt and bring to a boil. Simmer, uncovered, until rice is tender, 50 to 60 minutes. Drain and return rice to the pan. Cover and allow to rest for 10 minutes. 2. While rice is still warm, place it in a mixing bowl. Peel oranges with a sharp knife, removing all the white pith. Cut between the membranes and add the orange sections to the bowl with the rice. Add the olive oil, orange juice, raspberry vinegar, grapes, pecans, cranberries, scallions, 1/2 tsp salt, and pepper. Allow to sit for 30 minutes for the flavors to blend. Serve at room temperature. Serves 4 to 6. I need to resurrect it. Cilantro Rice Salad with Olives Makes 8 servings Salt 2 cups basmati rice 1/4 cup plus 1 tablespoon extra-virgin olive oil 1/4 cup white wine vinegar Freshly ground pepper 2 medium tomatoes, cut into 1/2-inch dice 1 medium red onion, minced 1 cup chopped cilantro 1/2 cup Calamata olives, pitted and finely copped 1. Bring a large pot of water to a boil and add salt. Stir in the rice and boil over moderately high heat until just tender, about 15 minutes. Drain the rice thoroughly and transfer to a large bowl. Toss the rice with a rubber spatula from time to time to cool it to room temperature. 2. In a small bowl, mix the olive oil and vinegar and season with salt and pepper. Gently fold the tomatoes, onion, cilantro and olives into the rice. Add the vinaigrette and toss well. Season with salt and pepper and serve. Make ahead: The rice salad can stand at room temperature for up to 1 hour. But most people treat it like rice. For the newer forum members, I am fortunate in that one of my brothers owns a piece of property where wild rice grows freely. The property has been in my family for more than 120 years. When my great great grandparents moved to Minnesota from South Dakota, my GG grandmother selected the land because of the stands of rice and the abundant wild life. As a Native American she knew how important the rice would be in years when the farm's harvest was poor. This recipe is for hand harvested marsh/river rice. Commercially cultivated wild rice takes longer to cook. The drying/toasting process of commercial rice causes it to be a much harder grain. One cup raw marsh/river rice will make 4 to 4.5 cups of cooked rice. Cultivated wild rice works just as well in this soup. And if you make a large batch and freeze the soup the cultivated rice holds its texture better. My favorite way to cook the wild rice: Heat oven to 350 degrees. You will need a covered casserole or pot (a 2 quart size is good). I use a glass casserole. Place in casserole: 1 cup raw rice 2.5 cups of boiling water or stock Cover and bake for 30 minutes. Test rice for doneness. Cook another 15 minutes if you want it more tender. Use excess water in wild rice soup. Wild Rice Soup 6 tablespoons margarine or butter 2-3 tablespoons minced onion 1/2 cup flour 3 cups chicken broth 2 cups cooked wild rice 1/2 cup finely grated carrots (I use more) 1 cup minced ham or leftover cooked chicken 3 tablespoons chopped slivered almonds (you can put them in the soup OR toast and top as a garnish) Salt to taste if you want 1 cup half and half (see note below) 2 tablespoons dry sherry Directions In large saucepan, melt margarine; saute onion until tender. Blend in flour; gradually add broth. Cook, stirring constantly, until mixture comes to a boil; boil and stir 1 minute. Stir in rice, carrots, ham, almonds and salt; simmer about 5 minutes. Blend in half and half and sherry; heat to serving temperature. Garnish with snipped parsley or chives. Sauteed sliced portabella mushrooms are a nice addition to this recipe. If half n half is to rich or caloric for you feel free to sub in some milk or low fat cream. This recipe is very forgiving and there aren't many substitutions that can ruin it. Creamy Rice Pudding 3/4 cup short grain rice 1 cup boiling water 1/3 cup sugar 1 tsp cornstarch pinch salt 4 cups milk 1 cup table cream nutmeg to taste 1/2 cup raisins (optional) 2 egg yolks 1 tsp vanilla 1 tbsp cinnamon Combine rice and boiling water in medium saucepan. Cover and simmer 15 minutes until rice is absorbed. Combine sugar and cornstarch and salt. Whisk in 1 cup of the milk. Stir until smooth. Add remaining milk and cream to rice, combine well. Add nutmeg and raisins, if using. Stirring steadily, bring to a boil. Cover and reduce to barest simmer. Stirring occasionally, cook 1 1/2 hours or until mixture is creamy. You don't want it to thicken too much, it thickens a lot when cold. Beat egg yolks. Remove pudding from heat. Whisk a little pudding into yolk then add to the rest of the pudding. Cook 1 minute; remove from heat and add vanilla. Transfer to individual bowls and top with cinnamon. **My notes: Instead of using 1 cup of cream, I use 1/2 cup of half and half, and 1/2 cup milk. I omit the egg yolks. This is very creamy on its own without it. I also don't put the raisins in. The school pays the local poor families the equivalent of a month's supply of rice in advance to allow their children to attend the school when they are five yrs old, rather than work for pennies a day or panhandle. The people are so poor they cannot afford to let their kids go to school because they lose the pittance the child brings in. This way, the family eats, and the kids get to learn to read, something their parents can't do. It is all volunteer, all donations, serving about 75 kids now, I think. Sorry for the ramble. A bug knocked me out this week. I love rice and make a wonderful paiella, but just wore myself out. Maybe later. o RE: Cookalong #47 ------- RICE clip this post email this post what is this? see most clipped and recent clippings Posted by publickman (My Page) on Sun, May 20, 12 at 22:11 I make rice many different ways, but here is what I am making tonight: Shari Rice (for sushi) Half Recipe: 1 cup Japanese Pearl rice 2 tsp dried kelp 1 cup plus 2-1/2 Tbsp water Seasoning 2 tbsp rice vinegar 1-1/2 tsp sugar 1/4 tsp salt Wash the rice and drain it in a colander. Place the rice in a heavy covered saucepan and allow it to sit for 1/2 to 1 hour. Add the water to the pan, along with the kelp in a teaball. Place the pan on medium heat, and when the water begins to boil, remove the teaball. Cover the pan and simmer for 15 minutes. Remove from heat and let rice cool for 10 minutes without removing the lid. Heat the rice vinegar, sugar, and salt until everything dissolves. Allow to cool. Place the rice in a large bowl, add the seasoning liquid, and stir with large wooden spoon, fanning all the time - I use a stand fan, but a ceiling fan works also, although not as well. Keep rice covered until ready to use. --------------- Today I am using Seasoned Seaweed Paste with Perilla instead of the kelp in a tea ball. I think it will be easier and make a nice variation. I bought sashimi yesterday at the 99 Ranch Market, and so I wanted to make sushi rice for it today. The sashimi was partially frozen, and I kept it in that state until tonight. Frequently I cook rice with vegetables so that I get a dish that is both a vegetable and a starch. I do this mainly because the rice keeps the vegetables hot, and I like the flavor of the rice better. I reduce the amount of water used for the rice according to the vegetable added, and I add the vegetables at the point in the cooking process when there is the right amount of time left for the vegetables to be cooked properly, and not overcooked. I do this mostly with asparagus and broccoli, but also with peas and corn. (Thank you Annie for sending me a bag!) It seems to work for me with cold rice salads, which I don't normally like with long grain brown rice. I think it is the smaller shorter grain I like with the black rice. We've been experimenting with grain alternatives to wheat. Luckily I love all whole grains. I've made two rice salads so far, and the results have been just so so. The first was one with quinoa, cilantro, cumin and parsely, the second featuring a grapefruit vinagrette. The first was better than the second. I have two more recipes to try. But I've used up all my black rice so have to get some more! I'm posting the first recipe, but the photos are from the second, which wasn't as good. But they LOOKED very similar. I'll link to the other one, but I don't recommend it. Orange juice and grapefruit juice don't go together for a dressing, and grapefruit is too yummy to get lost in a black rice salad. This comes from a wonderful blog called A Farm Girl's Dabbles. Some great looking recipes on there! Quinoa & Black Rice Salad with Cumin & Avocado Yield: 6 to 8 servings Ingredients 1/2 c. short-grain black rice (or substitute another color of short-grain rice) 1 c. red quinoa, rinsed well (or substitue another color of quinoa) 1 bay leaf 1/4 tsp. kosher salt 4 T. extra-virgin olive oil, divided 1 small onion, finely chopped 3 large garlic cloves, minced 2 tsp. cumin seeds (I just used ground cumin, 1 heaping tsp.) 3 T. freshly squeezed lemon juice 1/4 c. chopped fresh cilantro 1/4 c. chopped flat-leaf parsley 2 T. 1" pieces chives salt and freshly ground black pepper, to taste 2 avocados, peeled, pitted, and sliced into wedges 1 lemon, sliced into wedges Preparation Note: black rice and red quinoa are available at better supermarkets and at natural foods and specialty foods stores. I found mine at Whole Foods. Bring rice and 1 cup water to a boil in a small saucepan. Cover, reduce heat to low, and cook until water is absorbed and rice is tender, 25 to 30 minutes. While the rice is cooking, combine the quinoa, bay leaf, 1/4 teaspoon salt, and 2 cups water in a medium saucepan. Bring to a boil. Cover and reduce heat to low. Simmer until quinoa is tender, about 15 minutes. Drain the quinoa and let it sit in the hot saucepan, covered, for 15 minutes. Discard the bay leaf. Fluff quinoa with a fork. Heat 2 tablespoons oil in a large skillet over medium heat. Add onion and cook, stirring occasionally until soft, about 8 minutes. Add garlic and cumin and cook, stirring often, for 2 minutes. Add this to quinoa. Then add the rice to the quinoa mixture and stir well. Add the remaining 2 tablespoons oil, fresh lemon juice, cilantro, parsley, and chives. Season to taste with salt and pepper. Lpink's notes: This needs to be kicked up a notch. More salt, more dressing, more seasonings, more veggies. I added chopped grape tomatoes and green pepper. (That's why it probably needed more salt, lol!) Serve salad with avocado and lemon wedges. This was some kind of packaged rice mix, plus maybe some scallions too. Served with some kick butt chicken picatta with mushroom sauce. We splurged on shitake! Plus apple fennel slaw with a lemon and oil dressing, my new ab fab! And if you've been following my coleslaw quest, it was odd that this version was the one BF liked best (he who swears he prefers the creamy-type coleslaw). Nasi Goreng Cooked and cubed chicken, shrimp, diced ham or sausage can be added if desired. 6 servings : Active Time: 30 minutes : Total Time: 30 minutes Ingredients 3 large eggs, beaten 4 small shallots, peeled (or diced onion) 3 cloves garlic, peeled 2 tablespoons whole almonds (I like peanuts) 2 small chile peppers, seeded and diced 2 tablespoons peanut or canola oil, divided 2 cups finely chopped or shredded vegetables, such as yellow bell pepper, cabbage and broccoli 2 tablespoons reduced-sodium soy sauce 2 tablespoons kecap manis, (see Ingredient Note) 4 cups cooked and cooled brown rice 2 scallions, thinly sliced 1 medium tomato, sliced 1 small cucumber, sliced Preparation 1.Generously coat a wok or large skillet with cooking spray and heat over medium-high heat. Pour in eggs, reduce heat to medium-low and cook, lifting the edges so uncooked egg flows underneath, until mostly set, 1 to 2 minutes. Slide out of the pan onto a clean cutting board. When cool enough to handle, cut into thin strips. 2.Place shallots, garlic, almonds and chiles in a food processor. Process to a thick paste. Heat 1 tablespoon oil in the wok (or pan) over medium-high heat. Add the paste and cook until fragrant, about 2 minutes. Goes great with lamb, chicken, and fish and seafood! Ingredients: 1 small onion, chopped 1/4 cup butter or margarine 2 cups water 1 cup uncooked regular rice 2 stalks celery, sliced 2 teaspoons instant chicken bouillon 2 teaspoons finely shredded lemon peel 1/2 teaspoon salt 1/4 teaspoon dry mustard 1/8 teaspoon red pepper sauce 2 tablespoons snipped parsley Cook and stir onion and garlic in butter in saucepan until onion is tender. Stir in remaining ingredients except parsley. Heat to boiling, stirring once or twice; reduce heat. Cover and simmer 14 minutes without lifting cover or stirring. Remove from heat. Stir in parsley lightly with fork; cover and let steam 5 to 10 minutes. Yields 7 servings.
