Supper Time on Friday!

I will post when I can till Shirley is up to doing this. I have not heard how she is doing today.

I plan to fix for my supper a Porterhouse Steak, and probably a baked potato and maybe a salad, if I can hold that much. What are you planning for your meal today?

Heaven help me, I got a wild hair up my butt and am putting together a huge lasagna.

How did this happen?

Well, last week we had company and I made a lasagna with fresh pasta sheets, but bought too much. Now, I have 2 packages of fresh lasagna sheets to use up and I just can't help myself...another lasagna.

Oh! I bought this Emile Henry ceramic roaster which is huge, deep and relatively light.

Now, on the stove, I have a bechamel fortified with 2 egg yolks and a Italian sausage bolognese.

I'm also going to use ricotta to layer, along with Parmesan.

Sometimes these things just snowball!

It's a soup kind of day or at least it is for me. I have a big pot of chowder on the stove. With clams, potatoes, fire roasted corn, carrots, mushrooms, onion, green onions, a little garlic and a nice bit of grated Monterey jack cheese. Very thick and hearty. I really wish I had a hunk of crusty French to go with but I don't.

I have been so tired today and no reason for it. I could go on to bed right now. Hubby is not home yet maybe I should sneak a nap. Lol.

There were several pieces of the salmon I baked left over, too. I'd never thought of salmon chowder until I read caroline's post above, so I googled it. I wonder if I could call it chowder if I left out the corn? I've never been able to eat creamed corn. I made chicken stock last week, and I could use some of the finely diced peppers left from last night. We love cream of potato soup, so maybe I'll try something new tonight. ETA, I found a recipe with carrots. That works!

We still had some ham left over from Sunday dinner. I'd made a yummy soup with some of it a few days ago, so tonight I decided to make ham, cheese, and egg biscuits, and my DD cut up some veggies. I used the rough puff method of mixing the biscuit dough--they came out crispy and layered and really good. I julienned the ham and warmed it in the skillet after I cooked the eggs, mounded it on top of the egg, covered with cheddar cheese, and put them back in the warm oven until the cheese was soft. If you've never made biscuits that way, I recommend it!

Cream of Wheat was one of the staples on our breakfast table as children in the snow belt of central NYS. That, and Cream of Rice, Wheatena, Maypo, Ralston hot cereal, oatmeal, MaltOmeal, and some sort of chocolate Cream of Wheat were often options on the table to help stoke the internal furnace before we headed out the door on a long walk to school. Yum...healthful comfort food. ANYway, it's cold here, too! I made Ina Garten's seafood chowder (more or less) for us last night with homemade stock, shrimp, scallops, and cod. My version is full of vegetables, too....so good. It's going to be colder today and I think that I might do chili in the slow cooker to eat on all afternoon. Maybe the sprites and my neighbor will want to come over for some fireplace time. The girls are getting much better about letting the adults chat together while they entertain themselves in our midst. I can clear the central coffee table and put out a new jigsaw puzzle for them.

We had spaghitti with meat sauce, and salad. I had a angel food cake mix, was in a white bag and I can't remember the name, I think it was for resturant use that my cousin gave me. It only called for water. I mixed it and poured it into a half sheet cake pan lined in parchment. OMG was it good. I never would have believed it came from a package had I had it somewhere. I ate mine plain with coffee. The boys dipped theirs in chocolate flavored Cool-Whip.

Raven, that sounds so delicious! I love all kinds of chowders and soups....and, of course, gumbo. I'm having ice cream. We went out for mexican food...late lunch. My husband says he is going on a diet.....and he is asleep now...so I will eat ice cream and he won't be tempted.

I decided to try stuffed cabbage at a market near where I had a doctor's appointment today. This store used to be just a small fish market. They expanded to include a meat department, some groceries, a deli and take out food.

The stuffed cabbage was very good and we both agreed that we would have it again.

A come-down from my fancy meal on Wednesday. Had lunch out with my birthday daughter. So for supper-leftover lasagna, an apple, and now- a banana. Too tired to cook anything new.
