Best trim for around a tub surround?

The previous owner/builder of our lake home installed a tub and surround incorrectly for how they finished it. They lined up the outer lip of the tub surround with the top layer of sheetrock. (They may have planned to tile the walls around the tub and surround, but did not.) I think they should have lapped the sheetrock over the lip. As it is, there is a re-occurring crack between the surround and the adjoining walls. They attempted to mud it up smooth, but it always keep separating due to differences in expansion between sheetrock and acrylic tub surround.

I would prefer not to tile around the tub and tub surround to the floor, so I thought I could use trim board to do it. Real wood probably is not a good choice, what about the resin, urethane or MDF? I plan to do it my self using straight cut pieces and rosette blocks and such for all the angles and corners. I plan to paint it white.

Or are there any other solutions for the cracking joint between the tub surround and sheetrock?
