Remodeling a kitchen & bar in Colorado - advice please!

Hi! I posted a question on another thread and it was
suggested I should start my own...let me know what info I leave out! I am
planning a remodel for next summer, in the process of getting estimates and
finalizing my budget now. Pardon the mess in the pics! Uploading
scan of current layout with notes, as well as pics of current kitchen, I also
have an ideabook titled 'Kitchen' if you want to see more pics of what I'm
looking at. We are replacing all appliances except the
dishwasher. Replacing cabinets and countertops. Not moving any
appliances unless I decide to get rid of the wall oven in favor of a dual fuel
range, must confess I love the idea of gaining that cabinet and counter
space. Need to add a vent hood over the island to accommodate new rangetop
or duel fuel range. Currently looking at Decora maple cabinets in the
plain Marquis door style. Using Crema Bordeaux granite for the
countertops and honed light travertine for the backsplash. Taking any and
all advice, esp regarding cabinet brands and deals, appliances (looking at
Miele, Thermador, Dacor, Gaggenau, Wolf, Viking, BlueStar and Bosch Benchmark
for 30" microwave or micro drawer, undercounter 15" ice maker and
24" beverage center, counter depth fridge, 36" duel fuel range OR
36" rangetop + double wall ovens, island vent hood, and possibly a warming
drawer if I have any $$ left). We love the sink we have but will replace
it with an undermount in a similar style. WRT the bar, we are moving the fireplace to an outside wall and reducing the length a bit, and moving the upper cabinet higher and extending them the length of the base, so it will be 7' of upper and lower cabinets w a live edge wood counter.
