Supper Time on Friday!

It has been another nice day here, but I did not stay home. I have been running around again. First thing this morning went to a church rummage and also delivered 4 dozen eggs while in town. Ended up going to Sam's Club and different places with two daughter's and a granddaughter. We big gals got the hot dog and big drink from Sam's Club for lunch, $1.50, the hot dog was a nice size too. I had chopped onion and mustard on mine. I may not eat anything this evening, but what will you have for you big meal today?

I worked all day, but this evening marked the start of our vacation on the beach! We're having Dominos delivered tonight :-)

Tomorrow is my 58th birthday!

It was a beautiful day here also. I went to lunch with my neighbor then took her to have her glasses fixed. Came home to wonderful smells, I have the slow cooker loaded with Cajun 15 bean soup with Louisiana garlic and green onion smoked sausage from the smoke house I always visit at home. I have two mini loaves of French bread to sop up that soup.

Then me and my little dog took a nap. Now as soon as hubby gets home we will have some soup.

We still had some ham left over from Sunday dinner. I'd made a yummy soup with some of it a few days ago, so tonight I decided to make ham, cheese, and egg biscuits, and my DD cut up some veggies. I used the rough puff method of mixing the biscuit dough--they came out crispy and layered and really good. I julienned the ham and warmed it in the skillet after I cooked the eggs, mounded it on top of the egg, covered with cheddar cheese, and put them back in the warm oven until the cheese was soft. If you've never made biscuits that way, I recommend it!

Gadgets, I haven't made hard boiled eggs in a long time.Thanks for the reminder! Friday is typically date night for us, but with the torrential rains of the past 24 hours and flooding we're staying home. Dh had leftover Madras Curry and cuke salad for lunch. Dinner? There are more leftovers in the fridge or maybe I'll zap a couple of Amy's Veggie Lasagnas.

We were out of town running errands today, it was Costco day. Couple of other stops, when I'd planned for Friday earlier in the week I'd forgotten it would be Veterans Day and everyplace would be crowded and with sales. I'm not great with crowds ;0) and the lines to pay at Penney's were silly long but we did accomplish what we'd set out to do. Pulled off in a little town about halfway home to a Mexican restaurant we knew to be good, just had a very quick dinner there.

We had spaghitti with meat sauce, and salad. I had a angel food cake mix, was in a white bag and I can't remember the name, I think it was for resturant use that my cousin gave me. It only called for water. I mixed it and poured it into a half sheet cake pan lined in parchment. OMG was it good. I never would have believed it came from a package had I had it somewhere. I ate mine plain with coffee. The boys dipped theirs in chocolate flavored Cool-Whip.

I'm going to grill some big portobello mushrooms, after they're finished marinating. I'll finish them off with a slab of fresh mozzarella, red onions, basil from the garden, and a slice of tomato. A drizzle of balsamic vinegar after I plate it.

We like meatless meals every once in awhile.

Made a lemon cheese cake with cherry topping. I'd previously frozen lemon halves for just such a baking occasion. Zest & juice tasted fresh! Then made a potato casserole.....bacon/onions/cheese for dinner.

Happy Birthday, PKponder! Hope you have a great vacation!

They are forecasting lows in the mid-20s for the weekend, so I spent as much time as I could getting houseplants inside, harvesting everything left in the garden, and picking bouquets. Will finish up tomorrow (highs in the low 40s).

Had dinner at the local diner... tried both of their homemade soups: Boston Seafood Chowder and Southwestern Black Bean -- both very good! also had salad, broiled haddock, mashed potatoes, and coleslaw.

Happy birthday, PK! At what beach are you? We live close to Surfside....and sort of close to Galveston. My husband is working, cleaning of the engine in a shrimp boat that sunk that belonged to his friend. He said it should have only taken 3 hours....and this is the fifth day they have worked on it. I didn't ask what, but evidently ran into some problems. He didn't come home, so I took him some clean clothes. I went by a HEB store and bought fresh orange juice, a piece of cake and guacamole and chips. That was my supper. I bought 3 lb of chicken hearts for the possums.

HAPPY BIRTHDAY TO YOU PK! And many more! I would love to be on a beach. We are going to be on the river at the end of the month I am so ready for an rv trip.

We're going to Port Aransas with a day trip to South Padre. We plan to explore some of the more obscure beaches on the way down to SPI. It is so relaxing and different than my landlocked daily life, I just love the beach.

That makes me think of Old Fixer, wonder what he's up to?

Old Fixer has been gone for some time. I miss him, too. He was fighting three major health issues, a good fight. He always seemed to have a good attitude in spite of his illnesses.

He did love his Michigan beach, didn't he? And his 'happy hour'.
