RECIPE: What's your best improvement to boxed cake mix?
Comments (34)If I'm making the basic cake (white, yellow, chocolate, etc.) I always sift the powder mix first. I use applesauce instead of oil and I always add vanilla no matter what flavor cake I'm making. If I use the whole egg (I usually use the whites only), I beat the whites separately from the yolk before adding anything else. I've been told that my cakes have the texture of wedding cakes. Now as for variations I have added peanut butter and chocolate (a personal favorite) to a white cake, sour cream to a chocolate cake, strawberries to a white cake (omit water) and I am currently making pumpkin bars from a spice cake mix (which led me to your site because I was looking for a way to turn a white cake into a spice cake so I can double it). Use four eggs instead of three, add a can of pumpkin and a quarter of a cup of applesauce (or oil if you prefer), omit water. Bake as directed on the box....See Morenutmeg grater?
Comments (21)I use very little nutmeg - I don't really care for it in savory dishes (except for some Lebanese dishes, or in small quantities in meat dishes) and I despite it in spinach. I do use it in apple pie, and I love it in eggnog, which I drink only from Thanksgiving through New Year's. Since I like it in eggnog, I would like it in custard also. I really do not need to be drinking more eggnog, however. I think it would be nice to have fresh nutmeg in eggnog, and I would use it in cookies and maybe oatmeal with apples. Comments (11)If you have a Kitchenaid mixer, you can get a grater attachment for it. That's what I mainly use for grating cheese, and I tend to leave it on the mixer most of the time. It's very powerful and won't break, and you can use the fine grater attachment for hard cheeses, even though I do use a microplane some of the time for that. The regular grater will grate the softest cheese, including fresh mozzarella, although that I usually slice. Plus you have only one part to wash. Lars...See MoreParm cheese grater gizmo?
Comments (37)I've always called my grater a saber but I think it's a microplane. It's just a great grater. It does grating cheese, lemon zest, ginger, nut meg, fingers ...everything. I don't do the foot thing and I don't think I will suggest it to my DH. Honestly I used to hate grating cheese and was absolutely shameless in what I would do to con someone else into doing it but I really like doing it now. I swear I am not now and never have been employed by the makers of that thing......Tache...See MoreLars
