Comments (11)Lauren and I went to a new diner in town. The restaurant has gone through so many owners it's not funny. The new one is supposed to have no fried foods only healthy foods. Problem is they also sell pie and cakes and the "Amish Noodle soup" Lauren got so too satly for her to eat. We asked them to replace it with the cream of onion I got. So much for the healthy aspect. We also got sandwiches. But, you didn't ask about lunch, did you? LOL! We're probably having hot dogs left over from our camping trip, canned baked beans and I'm kinda craving potato salad. Will have to think of something else for Alex since he won't eat potato salad. Comments (13)I cooked that spiral ham. Along with that was mashed potatoes and beets. Anytime I send Bobby to the garage to get a vegetable either from the freezer or canned on the shelf I can be assured he is going to come in with beets. LOL After dinner I cut the meat off the bone and packaged it for the freezer. Got six packs of meat and a big pack with the bone and the juice from the pan the ham cooked in. Comments (9)Chilly and rainy here, too...so, time for a fall supper. Roasted pork tenderloin, rubbed with olive oil, garlic and herbs de provence. Vegs were steamed yams sprinkled with light brown sugar and steamed fresh spinach. Wine was Sarsaparilla soda :)...See MoreWhat's for Dinner Wednesday?
Comments (12)Partymusic, it kind of was like a frittata. I was looking for something meatless because I'm going to have ham with a honey glaze to go with it. It was very good but I'm glad I did a trial run. Will do some tweaking. It had cubed hash browns, zucchini, onions, red bell pepper and spinach in it. I think I will cut the spinach in half. It also called for eggs and egg beaters. I just had eggs but didn't know how much to use in ratio to everything. Next time I will use the eggbeaters, too to give it a little more eggy base. With those adjustments, I think it will be great. I never saw a double yolk hard boiled egg either!...See MoreKathsgrdn
