I saw the most beautiful, big green peppers at the store yesterday and they ended up in my shopping cart. So, tonight I stuffed them with a spicy, cheesy, tomatoey, ricey mixture and baked them with some chicken thighs.

I had some girlfriends for dinner. We had an enchilada casserole, home made guacamole, fresh corn on the cob and key lime pie for dessert.

Hubby loves blueberries, but I don't like them at all. Every so often I'll make him some muffins. He eats them plain with brown sugar. Rhizo, another healthy, healthy meal.
