What to make with fresh spring rolls

My 14 year old makes dinner every other Wednesday for a lady in our church who has diabetes and thus eats low carb and gluten free. This week she is thinking of making fresh shrimp spring rolls with rice wrappers, no noodles, just veggies and shrimp inside, but this is not filling enough for a meal. Any ideas of what else she could make to accompany it? Obviously fried rice is out. Thank you for any and all help!
