Comments (18)I'm still eating spaghetti squash picked last September. Most of them are about 2.5-3.0 lbs. Three hill got me about 12-14 squashes. I just cooked one, and got 1.5 lbs of squash out of it. I'm not generally a fan of winter squash, but I do eat the spaghetti variety. I have to say that I think the idea that spaghetti squash can replace pasta doesn't make much sense to me. I tried it with tomato sauce, and it just didn't work. I just eat it as a side dish - no sauces, but maybe herbs/seasonings. Comments (17)I haven't tried this recipe but I just got it emailed to me yesterday and it sounded good enough that I kept it for when I have zucchini or yellow squash. Squash and Pasta Toss 1 1/2 cups zucchini squash (or yellow squash) 1 clove garlic 1 tsp. dried basil 4 Tbsp. low-fat or nonfat ricotta cheese 1/4 tsp. black pepper 2 1/2 Tbsp. low-fat or nonfat parmesan cheese 1/4 tbsp. olive oil 1. Rinse and cut zucchini or yellow squash into bite-sized chunks; mince garlic. Reserve. 2. Prepare bite-sized pasta such as ziti or elbows according to recipe, omit salt: add zucchini or yellow squash to boiling water with pasta during last two minutes of cooking. 3. Meanwhile, in nonstick skillet heat oil on medium-high, sauté minced garlic about two minutes. 4. Drain pasta and zucchni or yellow squash when ready, reserving 1/4-cup cooking liquid. Add pasta and vegetables with reserved cooking liquid to skillet; mix well with spices and cheeses. Serve immediately. Makes 1 serving. Nutritional values per serving: 199 calories, 9g fat (4.0g sat), 18g protein, 13g carbohydrate, 3g fiber, 5mg cholesterol, 294mg sodium and 9g sugar. Comments (3)Thanks for the reply! I took them out of the wheelbarrow yesterday and spread them out in a single layer on a mesh table in the barn -- it's pretty warm in there. I did cook one today because I noticed it had a hole in it and a bit of mold on the stem, figured that might infect all the others. The skin was hard on this one, so I'm guessing the curing is finished - ? . I'll probably get to trying to store them this weekend, have to figure out the best spot, maybe in the crawl space under the addition, on the shady side of the house. I thought best storage temp is around 50 F - ?. What should I store them in? I don't have any wire baskets, and I'm worried about critters getting at them -- we have mice in the attic, they're probably in the crawl, too.
