What's for Dinner ... Tuesday?

I meant to start this before I left to go out to dinner, but forgot. I'll blame the heat/humidity here in Ohio.

I went to my first Amish dinner of this year tonight. Good eats all the way around. Baked chicken, mashed potatoes, gravy, chicken/noodles, creamed peas, combo cole slaw and salad. Home made whole wheat rolls. Dessert choices, 3 different pies, and date nut pudding. I got the latter of course. They don't often have that.

What goodies did you have today?

Ooh, Shirley.....that sounds so good. Very Amish-ish, lol.

We had leftovers from last night; cold cucumber soup, chicken, and I added some corn that Robert brought home. Added sliced tomatoes fresh off the vines.

I roasted a chicken, smoked oyster stuffing, spinach. I am stuffed!

Glenda: Your food all sounds excellent .. something I'd enjoy. Georgysmom: I wouldn't mind going through that buffet line. And I'm jealous of your husband's meal too. Raven: I'm glad I don't have to choose between your meals. I'd take my tuna salad in a salad. I like my bacon oven cooked too. Raven: I thought I smelled Italian cooking coming up from the south. Sure enough that delicious smell was coming from your house. Kathsgrdn: That must have been one big meal. Aren't leftovers wonderful? Sue: Cook once, eat twice (or more). It's great not just for not having to cook again but financially. Casey: I like baked chicken. I've never tried roasting vegetables. Care to tell me how you do it? Jasdip: What a delicious looking photo! And you made roasted vegetables too. Angela: I can fully visualize one of those kabobs on a plate/platter in front of me. Georgysmom: I bet you're being too hard on yourself. I know you are a very good cook. Glenda: Another great sounding restaurant. Got a chuckle out of what your meal was called. So many things on the menu, I'd have a hard time choosing. Morz: Next time you're having this "easy" meal, call me up. I could eat it at least once a week. Shirley

I had a great lunch after golf today. Grilled romaine hearts with salmon and a Caesar dressing drizzled lightly over all. The salmon was cooked to perfection. I'm often not pleased with salmon. Sometimes it tastes too strong but this was delicious. I made four qt.s of gazpacho today (I didn't play golf because it was too hot, but was committed to the luncheon) so I will probably have a little of that tonight. DH can help himself. For Father's Day I made all his favorites. Grilled flank steak, potato salad, cole slaw and three bean salad with garbanzo beans thrown in as an extra, and chocolate chip cookies. Lots of leftovers in the fridge.

It's all about stuff from the garden these days. I've fixed a marinated salad of zucchini ribbons, rat tail radish, grape tomatoes, cukes, chard, quinoa, and goat cheese. (I don't have a goat in my garden and don't raise quinoa, lol.) Robert is getting ready to grill some sliced pork tenderloin, also marinated, to add to the meal. We had another big storm this afternoon, which cooled things off a lot even though it's steamy. If I wore glasses anymore, they would fog up when I go outside. It is "the air that you wear", that's for sure.

I made a stir fry of chicken, banana peppers, jalapeno peppers, onion and mushrooms over ramen noodles

I also had chicken! and I made what really sounded good to me: hummus, tzatziki w/ garden cukes, and a tabouli from quinoa loaded with a variety of garden tomatoes, mint, green onions, and parsley.... It was fabulous!!!!!!!!!!!

One week into school and 3 of my 4 kids were sick and I've spent all day nursing them.

Just got groceries yesterday which means I had fresh ground beef (not frozen) so I asked hubby to make burgers.

They were tasty as always! Even the sick kiddos ate them up!

Your meal sounds really good Shirley. My supper was meatloaf, mashed potatoes and gravy. Iced tea to drink.
