You can most definatly use any hole for any accessory desighned to fit through hole. There are plugs of different configuration for covering unused holes. Some snap in,easy to install but not as water tight as those which are fastened with a bolt. Just brouse plumbing isle at big box to become familiar and go to plumbing specialty for higher quality and choices.

You might consider switching to something like this Mustee sink, which does not have any holes pre-drilled for faucets. You would only drill the ones you need.

FYI - all the items at Home Depot are available by special order and it usually takes only about a week. You do not pay shipping to the store, and you can even have them shipped to your house free if they are over a certain price. If I find the item does not work or is not what I expected, I've found it much easier to take it back to the local Home Depot than it is to go through return shipping for online stores.

Often single-hole faucets will come with an escutcheon (a cover plate or a deck plate) that's intended to cover the extra holes in a three-hole sink. Sometimes you have to buy the model that comes with it (bcs they sell one without); and sometimes they just automatically include it.

Those escutcheons might not leave you with a hole to put a soap dispenser in, so if you think you'd like a soap dispenser, just get one of those little round plates klem1 was talking about--they're a snap to find--and put it in one of the holes.

If you do get a single-handle faucet, get one with the handle on the right if you're a righty; I put mine on the left and discovered that's wrong. Because I *hold* whatever it in my LEFT hand, and use my right to scrub, squeeze, get the soap, turn on the water, etc.

I will say I like the single-handle, because you can adjust the temperature while one hand is busy, and because you can easily memorize which position is "lukewarm." You can get "warmish" with a single hand motion (this was important to us bcs our apt bldg's hot water is REALLY hot, and it would be hard to figure out where was the comfortable temperature.

Too bad they don't make the Kohler Avatar anymore (especially the Avatar Pro!). it would be perfect for you. I have the regular Kohler Avatar, and I'm thinking that if I ever sell my home, and I'm going to write into the contract that it comes with me.
Though this one is a pretty good approximation! Since it's only $80, it probably has a plastic spray head.

What I like about these over some others is that the shape is an L, not a U. So there's a lot more clearance -under- the faucet.

So as you're picking, focus on the distance between the lowest part of the faucet, and the top of the countertop.

The Delta Linden has a

• Spout Height: 9-4/7" (measured from counter top to faucet outlet) (not every set of specs may define "spout height" this way--for example, the Jordan from Lowes, above, has 10.5" spout height per Delta's description, but the Lowe's specs say 12.75, which is probably the total height of the faucet itself), but this is the dimension you want to focus on, if you want to put pots in there without having to move the faucet all the way out of the way first)

I grab it head-on, like this (though I grip the head with my whole hand):

and steer the stream with the base of my palm, almost as if it were a pullDOWN faucet. It's amazing how much easier it is I don't have to pull out as much of the hose, and it doesn't fight me..

You might look into a pullDOWN faucet, but those are often very tall, and then there might be a clearance issue when they come back down.

One other note: Don't cheap out.

you will use that faucet so much, and if you can at all swing it, go for higher quality even if it's a little more money.

Oh--regarding soap dispensers.

I have one on my kitchen sink. I like it because it doesn't move around and because I can use it one-handed (I should have put it on the RIGHT< because, again, that's the hand that uses the sponge, and I can just put the sponge on my fingers under the spout and push down with my thumb.

But it is more of a pain to clean around.

Also--look into spout REACH--how far into the sink does it reach? Some of the U-shaped faucets don't actually reach that far into the sink.

What I like about my faucet, as well, is that the water walls straight down; it's not coming out at an angle, which means it's less splashy.

If you pick a faucet you like and it doesn't come with one, most of the big manufacturers will actually sell you one that matches the faucet as a separate part. You might be able to get one from an online parts store
