thought someone might have posted this before me: re steam canners

The latest issue of Mother Earth News states that "researchers from the University of Wisconsin, Madison, funded by a grant from the USDA and the National Center for Home Food Preservation (NCHFP), have now concluded that steam canners can be as safe and effective as water bath canners when properly used to preserve acididfied or naturally acidic foods." (MEN, Aug/Sept 2015) The guidelines they released are essentially those that came with my unit.

I don't know how to find the article on the Mother Earth News website, but it's certainly in the hard copy.

Certainly these steam canners make small batch canning SO much easier and less time consuming. Taking my chances, I've been using it for years for pickles, tomato juice, whole toms, puree and ketchup, with an occasional chutney or other fruit/fruit pickle here and there.
