Black eye, chicken breast Jambalaya in
rice cooker

1 (12 oz) chicken breast diced

1 tsp Cajun seasonings

1Tbs plus ½ stick butter chopped

1 can black eye peas with liquid

1 can Rotel

1 (8oz) can tomato sauce

1 onion chopped

1 bell pepper chopped

4 cloves garlic chopped

2 green onions chopped

1 ¼ cup(10 oz)uncooked rice(raw)

1 cup water

season chicken with seasonings , brown
in skillet or cooker( use Saute and simmer setting on Aroma), with 1
Tbs butter

Add all remaining ingredients to the
cooker stir well. Cover let cook. Let stand on keep warm for 15
minutes .

To do this on the stove brown your
chicken with 1 Tbs butter, or use pre cooked rotisserie chicken
shredded, add everything else into the pot and cover and cook on low
simmer for 40 mins or so, check the rice to make sure it is cooked,
if not let it cook a little more.

This recipe is from the book Rice Cooker Meals by Neal Bertrand it is my fave rice cooker book and he is from near my home town in Louisiana a great cook.

Rice Cooker Chili

1 lb chili meat

1 onion chopped

2 TBS garlic

1 can sweet corn drained

1 can black beans drained or undrained

1 can Rotel tomatoes original

1 jar 26 oz mild salsa traditional

2 TBS chili powder

1 tsp cinnamon

½ package of taco seasonings

garlic salt

mesquite seasonings (optional) Adobo
seasonings (optional)

1 Rotel can of water.

Add meat and onion and garlic to the
Aroma rice cooker set on saute, stir with wooden spoon occasionally
till browned.

Add all remaining ingredients, stir
well, shut and lock lid of cooker. Cooker will automatically change
when it should just leave it closed and wait till you hear the dings
to let you know it has switched to keep warm.

I like to serve it with a little grated
cheese on top and if you want some finely diced onion.

Aroma Cooker Confetti chicken

This can be made with raw chicken
breast strips or with pre cooked fajita chicken strips I have used
both.

1 lb of the chicken strips of your
choice

1 can of white and yellow corn with the
juice if you can not find the mixed corn regular canned corn is
fine.

1 can black beans with juice

1 chopped purple onion

1 can rotels (use mild or hot which
ever you prefer)

11/2 cups of raw rice

½ cup of wine

Tony's seasonings and a little garlic
salt

a drizzle of olive oil

tiny grape tomatoes cut in half (a hand
full)

Put chicken in Aroma cooker and turn to
Saute, if using raw chicken continue to saute till chicken is almost
done, then add remaining ingredients. If using cooked chicken add all
ingredients at once. Stir well to get rice good and wet. Shut and
lock lid. When it goes to keep warm open and stir well then shut
again. Let set for a few minutes to make sure all the rice is done.
Once it is served I like to top it with some shredded cheddar jack
cheese. You can also sprinkle some cheese on top of it in the cooker
once it is done.
