Candied Ginger - For Georgysmom

On the March New Recipes thread you asked what to do with all your candied ginger. One suggestion is OOA's Chewey Molasses Cookies - recipe in linked thread. You can use up quite a bit in one batch of cookies.

Here's another one. This simple recipe came with a wok that I bought many moons ago. The wok is long gone so I just make it in a skillet. I have no idea what's Hawaian about this; probably nothing.

Hawaian Stir Fry

2 T peanut oil

1 lb ground beef (I use lean for this)

1/3 cup chopped water chestnuts

1/3 cup chopped green onions

1 clove garlic, minced

1/4 cup chopped candied ginger

1/4 broth or water

2 T soy sauce

2 eggs, lightly beaten

1) Stir fry meat in oil.

2) Add chestnuts, onion, garlic, ginger and stir fry 2-3 minutes.

3) Pour in liquid, cover, steam for one minute.

4) Stir in soy sauce and eggs, mix well.

I haven't made this in quite a while, but IIRC I used to bump up the broth, soy and eggs by 50%.

Anyone else have suggestions?
