Comments (18)Crustless quiche squares. Mix eggs, milk, a little flour, veggies/meat of your choice (I'm thinking spinach, roasted red pepper, garlic...) Dump the whole thing in pans and bake until set. Cut into bite sized pieces and arrange on a platter. Refrigerate until about 1/2 hour before serving time and they should be just about room temp. Easy!! Another is to bake an entire half sheet pan full of a savory cookie crust (or packaged crescent dough if you're really feeling awful). Comments (20)I tried this recipe yesterday using a can of lemon pie filling. First I tried to make cupcakes, but the cake stuck to the paper liners. So I went ahead and put the remainder in a cake pan. The cake rose beautifully and browned nicely around the edges but the center remained flat. The center never rose, and when it was done, I removed it from the oven and the exterior part that had risen collapsed fairly quickly. I was taking this to a party and was prepared to take it as is, but it was not even particularly good tasting. And it was chewy/sticky. While the batter tasted great, the consistency of mousse and lots of lemon flavor, the cake was "eh." I tossed it in the garbage. Afterwards, it occurred to me there is a reason angel food cake is cooked in a pan with a hole in the middle. (DH loves it and eats it like it is ice cream as a snack) My trick so i don't need to buy ricotta is to first put the cottage cheese alone in the mixing bowl and smash it with a potato masher tool. Just takes a minute and breaks up the curd. Then add the tomato, etc. Most NY pot-luck baked ziti from an Italian deli is so darn dry. (and probably prepared a day in advance). Needs moisture while it cooks. Sometimes i'll put a bottom layer of thin sliced sweet potato, zucchini, caramelized onions with mushrooms... I always make a veggie one that i've put in a layer of spinach. Extra veggies. Always the bottom layer so the pasta top 2/3rds stays creamy. Crisping the top is what makes it so delish and special. Any time you can get a full and filling meal in one pot is a winner. You have a good recipe. So much better than a basic Mac-n-greasy-cheese. I satisfy the meat eaters by tucking proscuito all over the top. Pressing it in with some staying on top to crisp with the final cheese crisping and bubbling. Seein gall the amterials together, the brown I had pictured would not be right and I would not match the floor. if you did a brown, you'd probably be looking at something pretty dark, and maybe towards the black side to keep it from getting too red -- something in the espresso/almost black range. With that in mind and the pewter glaze, I think I'd go for black too, but I think I'd favor it not rubbed through. You' ve got enough going on with the granite and the heavy grained floors.
