Comments (9)Bean Burgers (source: Eat More, Weigh Less - by Dr. Dean Ornish) Makes 6 5-inch burgers 1/2 c. minced green onions (I also use chives) 1-1/2 T. minced garlic 2 T. white wine or vegetable stock (I use water) 1 29-oz. can cooked drained pinto beans 3/4 c. cracker meal 2 egg whites (I use 1 whole egg) 1/2 c. chopped fresh parsley 2 T. seasoned rice vinegar 1/2 t. SPIKE seasoning powder (found in health food stores) Preheat the oven to 350°F. In a small nonstick saute pan, braise the onions and garlic in the white wine until soft. In a medium bowl, combine the sauteed onions and garlic, beans, cracker meal, egg whites, parsley, vinegar, and seasoning powder. Mash well with a fork or potato masher until blended but not entirely smooth. On a parchment-lined nonstick baking sheet, drop the mixture by 1/2-cup amounts (I use 1/3-cup) and flatten gently with a spoon to form 6 5-inch "burgers." Bake for 25 minutes, or until set and beginning to brown lightly. Serve hot. 179 calories, 2 g. fat, 0 mg. cholesterol, 738.2 mg sodium Grainlady note: I make a couple recipes of these and keep the "burgers" vacuum-sealed in a FoodSaver bag in the freezer. Comments (10)I haven't eaten any kind veggie burger in a very long time and I'm skeptical of recipes that have so many ingredients. I can see the difference between undercooking beans and getting well cooked ones very dry, and agree it's a matter of moisture content. Undercooked beans are tough Many years ago, I worked in a hippie vegetarian restaurant and we made lentil burgers with basically equal parts well-cooked lentils, brown rice and millet, mashed and flavored with chopped onions and parsley that had been sauteed in lots of margarine, seasoned with salt and pepper and tamari soy sauce, then fried in oil and served on home made onion rolls with mayo. They were so good! Probably because of all that added fat...☺️ I do recall the lentils, rice and millet were cooked uncovered until very thick, not much moisture left....See Moreprettybluehouse
