Parsley root, who knew?

So as a follow up to my "Second year parsley leaves" post . . . While I was mulling over what was up with the parsley in my garden and what to do with it, the deer came by and ate off all the parsley tops! I don't think I'm going to have room in the beds for it anyway, so I pulled all the stuff out and now I have a whole pot full of little white parsley roots. If I possibly can, I am going to try to cook it into soup. I have to work most of this weekend and I'm going out of town next week, but a gal can hope . . . Here's an article I found about it. If I don't get to them I will try and save them in the fridge and see if they still look edible when I get back. The parsley root and lady apple soup sounds interesting . . .
