What's for Dinner ... Tuesday?

This will be a quick post, then gone for the rest of the evening. I hurt my back yesterday.

Please share with the rest of us the menu for your main meal today.

gadgets, hope you are feeling better soon and nothing too difficult to resolve has happened....

DH is just about to put on the prime rib that we had planned but didn't cook yesterday. He's home early enough this afternoon that he can cook it, and roast potatoes, I'll make a salad and wash some blueberries, adding some antioxidants to the meal ;)

The roast had been for the holiday weekend. We ate out on Sunday, weather yesterday was cool and drizzly and we got involved canning tuna outside over gas in the open doorway to the garage and didn't feel like watching the roast too.

Oh no I hope you feel better soon.

I have a chicken cacciatore casserole in the oven. Lots of good veggies in it, fresh mushrooms, Vidalia onions, tomatoes, bell pepper, garlic, cacciatore sauce and topped with sliced mozzarella cheese. I have a small loaf of bread to make garlic bread to go with it.

Grilled some salmon on a cedar plank, always so good. Made a salad with greens and marinated veggies from the garden, a little rice pilaf. Awfully hot here today, even though the patio and back porch are shaded after about ten, you could feel the heat radiating from the concrete. Glad that the salmon didn't take very long!

Stuffed patty pan squash is on the menu, as much as I hate to use the oven. The stuffing will consist of squash innards, jalapeno and chipotle peppers (small doses), corn, chopped tomato, quinoa, seasoned with a little cilantro, lime zest, and topped with queso fresco. It's gotta be good, right? A neighbor brought over a Sugar Baby watermelon which will be enjoyed later.

We had an unplanned dinner guest. My daughter's first husband had taken their son swimming, and got back here just as dinner was coming out of the oven. The kitchen smelled so good--I could tell he noticed, so I invited him to stay. We all shared a pleasant meal--my daughter, her husband, her ex, and their son. I'm so happy for grandson's sake that everyone gets along.

I made a pile of zucchini noodles, sauteed them briefly in a little butter with some minced garlic and served it up with grilled shrimp and smoked sausage kabobs. I steamed some broccoli, too, to stir in with the zoodles. It's been very rainy here and very steamy when it isn't raining. No sitting on the patio, that's for sure.

I hope you're feeling better too, Shirley.

I made chicken with 40 cloves of garlic on Sunday purposely to have through the week. Tonite was the nite. Just re-heated the chicken, potatoes and carrots in the broth.

Had a huge salad for lunch and brought half of it home……chicken, tuna and shrimp trio. Looking forward to finishing it up. Hope your back is better by tomorrow or real soon, Shirley.

Take care. Hope for a speedy recovery.

I didn't really feel like cooking. Made a Caesar Salad. Popped a potato in the oven. After about 30 min I tossed a filet mignon in a small skillet. Proceeded to eat the salad. Now I'm diving into the Baker & Steak.
