Cod Cakes

Working on my CodCake recipe again. I get requests from family and friends all the time, but the written form needed a visual.

One sister does not eat potato, no dairy, no bread. I suggested a mild grain. A gluten-free saltine type cracker. She wants to use chick peas and curry spice and coconut milk. : )

This is coming from Miami, Idaho, SCarolina, Del, NYC, NewOrleans and costal Canada...different places, different diets...spice, no spice. One friend hates celery.


Pretty simple. Cubed potato. Water to cover...by the time that is tender everything else is prepped and chopped fine. I add summer savory to the water, thyme would be good.

1/3rd red pepper, couple ribs center celery and the leaves...some chives. (i've used green onion and shallot, just can't get that now). Simmer the fish on low, in the potato water, (potatoes taken out with a slotted spoon and smashed), add a bit of milk and simmer the fish, any firm white fish until flakes easily. Take out the fish with slotted spoon. Save the fish broth.

Stir up the smashed potato with the minced veg and any spice to suit your region...OldBay for the EasternShore crowd...gently fold in the fish. Using cooking liquid if needed.

I used a local cream cracker, just three. About 3 saltines worth. Let rest a few hours in fridge to firm up. Once formed into cakes they even freeze well. I used our own bread crumb but panko is a good on. It does give a nice crust when sauteed.

I don't use egg. Love eggs but detracts from the fresh fish.

I use about 12oz fish fillet. Just three crackers so not a doughy filler, just a bit of glue with the potato.

Makes a dozen cakes. 2 per person for a meal. 1 as an app. makes twice that, two dozen, for horderves.

It is the sauce that adds any spice and creaminess. Also a preferred local regional favorite. Some like tartar sauce. I like something with a bit of tomato and horseradish. Decided we like the cakes simple. I tend to over spice things.
