I already have one single wall oven GE profile in a oven cabinet that is only about 5 years old. I could move that oven under the counter & put the side swing in the oven cabinet. That would allow me to install my warming drawer directly under that oven. I don't think it would be so bad being a little higher with the side swing door.

That's a good question, wekick. Miele recipe book for combi steam oven does not have any recipe that use full grill with moisture, however, there are recipes that use combi mode full grill with 0% moisture. From Miele demonstrator's word when I took their cooking classes, she said that by default Miele oven retains some moisture during cooking. For the plain oven, there is a crisp function to release moisture which is done by opening up valve. This is akin to Wolf convection and convection humid mode in their CSO. For Miele combi, you have the option of setting moisture level to 0% to force the oven to release all the moisture possible. Despite there is no recipe in the book using grill with some moisture, the advertisement in Miele catalogue does claim that it is good for fish and meat. My self, I have got a pretty good result with white fish marinaded in sweet miso (saikyo miso fish) cooked in full grill combi mode with some moisture. It is cooked skin side up towards to grill. With preheated grill, and some humidity. outside is brown fairly quickly, and pretty much when the marinade starts to burn due to high sugar content, cooking is done.

We were hoping to do this in our new build with Bosch or Thermador units. Our cabinet guy said he could build a cabinet to make it work, but our appliance rep (and primarily his brand reps) said they wouldn’t stand behind the install in this configuration. We decided to split the two undercounter ovens, with a stack of cabinets directly under the cooktop and the two ovens to either side. I know it’s not ideal and would get torn apart by the kitchen gurus here, but it is what works best for us in this situation. We use two ovens a lot, I don’t particularly care for using the top oven in a stack (I’m short and don’t like lifting/lowering things at head level), and our options for stacking ovens this kitchen seemed to really close it in and limit countertop space. So this is what worked best for us.

The stick definitely helps to keep hands & arms away from hot doors. And I can hook the stick on the edge of the open door to pull the door upwards a bit, then shut the door. Less stooping that way. It is surprisingly easy to give my oven door a gentle lift with the stick. Most ovens have roller racks now, so a stick is a great help there. Also keep in mind that you don't use the bottom-most rack too often. Heavy turkeys or cast iron Dutch ovens might be a problem, but only occasionally. At least with a push/pull stick you can easily pull a rack out to get the heavy item in a better position for lifting. My issue with low placed ovens are the controls. Bending over to see the control panel is a bit awkward. I find with my oven I sometime hit the wrong selection just because I'm not bending down enough to view the control panel straight on. Some tiimes I use the phone app for the oven -- those controls are always at eye level.
