Q re Carrot Cake

I'll be making a carrot cake tomorrow for Easter dinner on Sunday. I'll be using the trad'l cream cheese frosting. Does the cake need to be refrigerated? Or can it sit out?

I wouldn't leave it out overnight. It probably won't spoil (though I wouldn't take a chance with company), but it'll get all gooshy and scummy and weird.

If you don't have room in the fridge, and do have a good cake safe, you could make a chill box for it. Use a big corrugated carton. Wad up some newspaper or similar, or rags to line it a few inches deep on all sides. Add a layer of thick towels, then zipper bags of ice, or chill blocks if you have them, or slabs of an ice block, or wrapped dry ice. Add another layer of towels, and the cake safe, fold the towels over the cake, and add more paper. Store in a cool, dark place. That should keep well for a day. It's best if the cake and cake safe are already chilled so you don't have as much condensation. Don't put cold on top of the cake to limit the condensation that could drip directly on the cake.

I too am making the cake. But tonight, frosted tomorrow, and in the fridge for every moment inbetween until Sunday morning for transport.

Another who grates the carrots....and even at the risk of over exposure, I'll post my carrot cake again....well not really MY recipe...came from Julie Trussler's cook book. and I will repeat what the others have said....be very very sure the cake is done. I think the cake needs all the moisture form the carrots. anyhow...here's the recipe....always a keeper. Carrot cake Julie TÂs 3 eggs 3/4 cup vegetable oil 3/4 cup buttermilk 2 cups sugar 2 teaspoons vanilla 2 cups flour 2 teaspoons baking soda 3/4 teaspoon salt 2 tsps cinnamon 1 8 oz can crushed pineapple, drained 2 cups grated carrots 1/2 cup raisins chopped with 1 Tablespoon of flour Buttermilk glaze 1/2 cup sugar 1/4 tsp baking soda 1/4 cup buttermilk 1/4 cup butter 1 Tblsp light corn syrup 1 tsp vanilla Orange Cream Cheese Frosting 1/2 cup softened butter 4 oz softened cream cheese 1 tsp vanilla 3 cups powdered sugar 1 tsp orange juice 1 tsp grated orange rind Preheat oven to 350 With a mixer Beat eggs, add oil and buttermilk, sugar and vanilla. beat to combine. Stir together flour, salt, cinnamon and baking soda and stir into batter. stir in pineapple, carrots and raisins. Pour into a greased 8 by 13 pan or 2 greased round 9 inch cake pans. Bake 35 to 45 minutes until set in the middle. Remove from the oven and immediatly spread with the buttermilk glaze. Cool completely and frost with the cream cheese frosting. Buttermilk glaze: In a medium sauce pan ( don't use a small pan) combine all ingredients but vanilla. Bring to a boil and cook 3 minutes stirring often...it will bubble a lot. It should be a light caramel color, stir in vanilla and pour over the cake Cream cheese frosting: Beat cream cheese and butter until light add vanilla powd. sugar and juice and rind...beat until smooth and frost the cooled cake.

Ann, I made the cake this afternoon and took it over to my dad for his 89th birthday. We all had a piece of cake BEFORE dinner....you get to do things like that when you're 89! What a fabulous cake!! The texture is amazing. So rich and moist. It was a huge hit. My dad told mom he thought he'd just skip the special dinner she prepared for him, and have a second piece of cake. And, he'd have another piece tomorrow morning for breakfast. This recipe is a keeper, and I'll gladly serve it for luncheons, gathering of the Bunko group, etc. Thanks so much for sharing.

WatchMeLOL, my husband was born in New York and lived there until he was about 9. Cheesecake -- true, authentic, New York cheesecake -- is his absolute most favorite dessert. He hates cheesecakes that on menus are listed as "New York Style" because, he says, if it is true New York cheesecake it will say "New York cheesecake" and not "New York Style cheesecake." To him, "New York Style Cheesecake" means "sort of in the fashion of New York cheesecake, but not quite the real thing." Back in the mid-1980s when we were living in Lake Forest (in Orange County), California, I read an article in the local newspaper about these two guys and their families who had moved to California from New York. They were big cheesecake fans, but decried the "New York Style" cheesecake that is everywhere in California. So, they opened up their own place and name it "New York Cheesecakes" where they made authentic New York cheesecakes. At the time I read the article, Hubs and I were planning our wedding (which was held in May 1986). You guessed it. Our wedding cake was from New York Cheesecakes.

The cake alone would be fine sitting out, but the frosting should definitely be refrigerated for the reasons pillog mentioned. If refrigerator space is the issue, just cover the cake until Sunday and frost that day.

If the weather is mild where you're at, the cake and its traditional frosting (cream cheese; butter; confectioner's sugar) will be perfectly fine. Cream cheese and butter, on their own, do not spoil as easily as most people think. Plus the addition of sugar acts as a preservative.

If, however, you're in a very hot and humid climate, I would do as plllog suggests.
I would refrigerate frosted cake (preferably in a cake box, or lightly-covered, and away from strong-smelling foods, as the fat in the frosting will pick up these odors). Then, before serving, an hour or thereabouts, remove cake from the fridge, and bring into an air-conditioned room.

The gradual change in temperature will prevent the cake from 'sweating,' and will keep tinted decorations (if any) from bleeding.

Hi Sol! Hot and humid here, so that's why I refrigerate, refrigerate, refrigerate. Sounds like I not be too awfully dumb. Hugs!

Thank you all so much. I do want to frost today, so I can refrigerate. No need to worry about hot and humid here. And air conditioning? I can only wish. If it wasn't for critters, I could actually keep the cake outside. High tomorrow is supposed to be only 50. Thanks for the heads up about the odors. I have a small spare fridge that we'll put some beer in, so I'll see if the cake can't fit in there too.
