I've probably made matzo stuffing 3 or 4 times before, none of them from a printed recipe. I have been tasked with cooking a turkey for Friday night's Passover dinner and with it comes the need for stuffing. I did a web search and read several different recipes, none that really appealed to me.
For those who've made it before, what can you recommend?
I have all my mother's instructions (below is closest to a "recipe") but I couldn't seem to make it right, and I finally figured out that the brand of matzah might be a big reason. I always buy Yehuda for the household because it tastes better, but I think it's drier or denser than Manischewitz, and that's the problem.
Last year's leftover matzah and mandelin (must have mandelin), stored in the freezer, makes great stuffing.
8 qt. Matzah and Mandelin, broken up Sauté lightly: 3-4 big stalks of celery cut medium 1 big onion +/- 12 med.-lg. white mushrooms, sliced diced green and/or red peppers 1 tsp. poultry seasoning 1 thin tsp. citrus herb seasoning Don’t over season Add chicken stock to barely dampen 2-3 beaten eggs Add a little extra broth for extra in a casserole and spray/grease the sides of the dish.
I'm on a business trip so I don't have the recipe with me. I use one from a cookbook, but tend to modify it. So from memory:
About 5 matzahs broken up coarsely - I put them in a bowl and crush them by pressing down until they are in approximately half inch square. (If we have a box left from last year, I use those. Sometimes I've used whole wheat.
5 matzahs broken up 1/2 cup orange juice 1 medium onion chopped 2 celery stalks chopped 1 or 2 carrots (depending on size) chopped poultry seasoning or herbs such as sage and thyme (don't recall the quantity - probably about a tsp or so) 1 egg, beaten Optional: ~ 1/2 cup chopped walnuts ~ 1/2 cup diced dried apricots.
Pour the juice over the matzah to let it soak in a bit. Saute the vegetables. Mix everything together.
At the last minute, I found my recipe on a 3x5 index card, stuck inside the cookbook. I was checking for the turkey roasting time and the card was bookmarking the page. Thanks both of you for the suggestions. Here's the recipe I used:
Matzo stuffing
1 box of matzo - crushed to farfel size pieces. Mix in a large bowl with a stick of melted butter. I also had some chicken fat from a previous pot of Suzi's amazing chicken soup, so that was mixed in as well. 2 small containers of sliced portobella mushrooms. Sautéed in olive oil and then chopped into small pieces. Mix in with the matzo. 2 small yellow onions chopped small and sautéed in olive oil and a heaping tablespoon of minced garlic. Mix in with the matzo. About half a cup of carrots, minced in the food processor and mixed in with the matzo, et. al. 3 stalks of celery, cut small and sautéed with a stick of butter. Then chopped small and mixed in with the matzo. Make sure all the butter goes in with them. 3 eggs, beaten and then mixed in with the matzo.
Mix it well by hand and leave it in the fridge until you're ready to stuff the turkey.
This is probably the 4th or 5th time I've made this and not in at least 10 years. We'll see if it's still a crowd-pleaser tonight.
