Wall oven input needed

This forum has been tremendously helpful in selecting appliances
for our new build. I would greatly appreciate some input/comments on
ovens. We cook daily, with multiple cooks in the kitchen, including three
children between the ages of 8 and 13, and we enjoy it, but are by no means
gourmet cooks. We bake, make bread, make pizza from scratch, and roast
regularly. We will have two kitchen areas: a main
kitchen, which is where most of the cooking will be done, and a clean-up/catering/pantry kitchen for overflow and when we are entertaining. I
have this set up now and love it. I currently have 4 full sized
ovens (double Miele and two separate Wolf ovens). We use four ovens regularly, but sometimes we are heating up a large oven
for a small dish. So, here is what I am leaning towards in terms of ovens, in two options:

Option 1:

Main Kitchen:

Double Ovens: Bosch Benchmark with side swing doors.
Choosing this as it seems to have all of the features I am looking for in
an oven with side swing doors. I considered the Gaggenau, but it is very
expensive.

Clean-up/Catering Kitchen: This kitchen will
have a 24" 3 burner induction cooktop.

Combi-Steam Oven: Miele (considered Gaggenau, but at
almost $4,000 more than the Miele I am not sure it is worth it, particularly
since Miele is now available in a plumbed version).

Wall oven: 24" Miele single oven; located in an oven stack,
with the Combi Steam oven

Over the Cooktop 30" 240V Advantium Microwave/Speed Oven

Option 2:

Main Kitchen:

Double Ovens: Bosch Benchmark with side swing doors.

Combi-Steam Oven: Miele -- this oven and the double ovens will be located across from
each other in separate oven stacks

Clean-up/Catering Kitchen: This kitchen will
have a 24" 3 burner induction cooktop.

Wall oven: 30" Bosch single oven; located in an oven stack,
not under the cooktop

Over the Cooktop 30" 240V Advantium Microwave/Speed Oven

Here are my questions:

  1. Am I making a mistake
    getting the Bosch double ovens? This is
    a high end home and while I am not concerned about resale, I do think I should
    have high end appliances. I love the side swing doors. Are the Gaggenau ovens worth $3,500 more than the Bosch ovens? I currently have Miele and Wolf ovens and have had Thermador. I think they have all been great ovens, but I don't use many of the features on the ovens, like Masterchef on the Miele.

  2. With option 1, will I
    dislike have the combi-steam oven outside of the main kitchen area. I am not sure if the combi-steam oven is
    something that you leave alone or check items in it frequently, like when I am baking
    sheets of cookies?

  3. With option 2, am I
    making a mistake getting the same brand (Bosch) wall ovens? Should I get an oven
    with rotisserie or some other features the Bosch double oven does not have for
    the clean-up kitchen such as the Thermador Professional?
