lindac92, that is possibly the worst attitude to have and it's unfortunately all too common. The planet is a mess enough as it is without disposing of cheap crap because you can't be bothered to invest in and take care of good quality products. Can anybody tell me weather it's safe to use a cleaning product like Oven Sense on non-stick surfaces? I bought it to do my baking trays and then realised it might take off the coating. I really don't want to ruin my cookware.

High heat is fundamentally incompatible with PTFE nonstick coatings, which covers Anolon, Scanpan, and everything else I'm aware of that is actually "nonstick." Given your technique of cooking with high heat, the reasonable options I see are (I covered some of this in my reply to your other thread, so please forgive the duplication): 1. Get cheap nonstick pans that you can replace whenever you destroy them. I like the Johnson Rose Crown Select pans, which are available for Instawares and other retailers. 2. Go with stainless steel pans. In my experience, the Silvinox surface treatment that Demeyere gives to their Atlantis and Apollo pans works better than normal stainless steel, but a lot of people are quite happy with All Clad and similar pans. 3. Use Demeyere's ControlInduc nonstick pans on an induction burner. As you mention in your other thread, they stop heating at 485 F, which will prevent you from damaging them by overheating them.

Kinda think ya need a LITTLE oil or butter even in non-stick. Don't know WHAT the coating is on them, but I'd recommend Calphalon non-stick. Not terribly expensive... places like BB&B usually have set of 2 skillets for around $40!?! And treated kindly (no metal tools or VERY gentle with metal), they're NOT thow-aways. Had heard/read about their excellent return/replacement policy and took them up on it last year. Returned favorite sauce pan (easily 15 yo) and 2 skillets (5+ yo?). Sauce pan was showing wear in bottom... wooden tools and/or plactis(?) whisks only. Skillets just weren't as non-stick as had been. Went to their website, filled out some info, printed out a shipping lable, and sent them off... NO receipts required! A week or so later, came home to BRAND NEW replacements at front door. All it cost was shipping.

My non stick are Scanpan and not inexpensive. Purchased on sale of course, I rarely pay full price for anything and bargain shop for my kitchen along with everything else ;0) Those I have now are years old, no wear or scratches but I use only nylon or wooden utensils in them. I've used the $20 Costco skillets too, and those will show wear. Keep the nice heavy lid if retiring the Costco pan, it's surprising how many other brand large skillet it will fit and not all pans are sold with lids. That Costco lid even fits one of my pressure cookers allowing me to use it for a water bath canner ;0)
