We can start a new one, it's been a while since we had one.

Here is a recipe I want to try Asian stuffed mushrooms

8 ounces cream cheese,* softened1 egg yolk1 large green onion, chopped (1/4 cup)1 clove garlic, minced1 medium carrot, shredded (heaping 1/3 cup)1/4 cup cilantro, chopped1 or 2 teaspoons ginger, mincedjuice foci rom half a lime (at least 1 tablespoon)1/4 teaspoon salt12 large mushrooms1/2 cup Sweet Chili Sauce1/2 cup coconut milk*lime wedges and chopped cilantro, to garnish

Directions:

Preheat your oven to 375 degrees F.

In a medium bowl combine cream cheese, egg yolk, green onion, garlic, shredded carrot, cilantro, ginger, lime juice, and salt. Stir until creamy. Set aside.

Clean the mushrooms thoroughly by washing or brushing them. Remove the stems from the mushrooms and discard. (See photos for stem removal tips).

Place the mushrooms top down in a 2-quart baking dish. Use a spoon to fill each mushroom with the cream cheese mixture.

In a glass measuring cup, add about 1/2 cup Sweet Chili Sauce and about 1/2 cup coconut milk. (Taste it to see what ratio you like.)

Drizzle the sauce over the mushrooms. Bake uncovered at 375 F for 20-25 minutes, or until the tops have started to brown.

Serve hot. Garnish with lime and cilantro.

Pumpkin Bread Pudding

1 (1 pound) loaf day old Bread (French, Italian, or Challah), torn into small pieces1 cup Heavy Cream1 cup Half and Half1 15-ounce can Pumpkin Puree1-1/2 cups Granulated Sugar3 tablespoon Melted Butter4 Eggs2 teaspoons Vanilla1 tablespoon Pumpkin Pie Spice *

Praline Sauce

1 cup Unsalted Butter1 cup Heavy Cream1 cup Brown Sugar½ cup Chopped Toasted Pecans

Pumpkin Pie Spice

2 tsp Cinnamon⅛ tsp Nutmeg¼ tsp Ground Ginger¼ tsp Ground Cloves½ tsp Ground Allspice

Instructions

Preheat oven

with cooking spray and place torn pieces of bread in the dish.In a large bowl

, whisk together the heavy cream, half and half, pumpkin, sugar, melted butter, eggs, vanilla, and pumpkin pie spice.Slowly pour the batter over the bread pieces in the baking dish. Be sure to cover all the bread pieces.Bake in a preheated oven at 350 for about 1 hour.While the bread pudding is baking, make the praline sauce. In a heavy saucepan

over medium-low heat, stir together the butter, heavy cream, and brown sugar; bring to a boil. Reduce heat to low, and stir pecans into the cream mixture. Simmer until the sauce thickens, for about 5 minutes; pour over bread pudding to serve.
