Any 'different' sausage ball recipes?

You know....the sausage/cheese/bisquick things? Robert came home tonight and told me that his office secret santa party is Thursday; everybody brings some sort of snacky tidbit and he'd like the sausage balls.

Does anyone have a unique twist to the T&T, or a dipping sauce?

I found one that uses cream cheese along with the regular ingredients....I really like the difference. Seem more moist to me.

Past couple years, I've made these for Chrismas parties with success and raves.

Oh! Westsider's must be the quickie way. I've never done them in a covered pot. It's great that the butcher is putting all those parts together for you, agmss, so you don't have to break down the chickens yourself to get them and still make the best use of your sister's chickens. Since she's giving you fat, here's what I do to render it: Rendering chicken fat Put the lumps of fat in a little pan with a small onion or half a large onion, cut into large pieces. Don't put in too much onion or it'll soak up all the fat. Never turn your back on it while it's on the heat. Start on a medium high heat until the fat starts to melt. Turn it down a bit so it won't spatter Once all the fat is melted, turn it off and let it cool just a little.. Pick out the onion and any other solids with a fork, or use a strainer. Put a spoon in a clean glass jar (sterile if you're not going to use it all up right away). The spoon keeps the jar from breaking. Pour in the fat, carefully. (Remove the spoon.) Cover and chill. Keep in the refrigerator. When the fat solidifies the onion juice will separate out of it, on the bottom, as you'll see through the jar. The fat will be yellow from the onion, as well. Once it's solid, chicken fat can be frozen in an airtight package. Don't put a glass jar in the freezer. ------------ So, in my house, he who wants to eat chopped chicken liver gets to make chopped chicken liver. :) I checked. It's the sinew that makes it bitter, but it's easy to remove. Here's a great little how to de-sinew chicken livers video. Also make sure to remove any bits that aren't the right color. :) LPink, I don't judge! If the mix suits you, why not? Some mixes are very good.

Marg, The meat spread we make is made by taking a combination of cubed beef and cubed pork (anywhere from 50-50, to 2/3 - 1/3 beef to pork). I usually use stew beef and cut up a couple pork steaks. Put the meat in a stock pot with a couple medium sized quartered onions, salt and pepper. Just cover the meat with water, bring to a simmer, covered and let simmer until meat is fork tender. We then take the meat (and some onion if you like) and run it through a meat grinder. Lately I have been using a food processor, works just as well and allot quicker. After the meat is ground/processed, I put it in a container, and pour the strained stock over the meat, stirring and letting it settle until the meat is saturated with the stock. When it's done right, you should be able to push the back of a spoon into the top of the mixture, and see a little of the stock form a pool. We then put it in the refrigerator for the stock to congeal. It becomes a great meat spread for sandwiches. We also have a condiment spread that tastes great with it. Meat Spread Sauce Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 Cup Cider vinegar 4 tablespoons Sugar 1 tablespoon Mustard 1 teaspoon Cornstarch 1 tablespoon Flour 1 teaspoon Salt 1 Egg 1. Add Vinager, Cornstarch, Salt, Sugar And Mustard To Small Sauce Pan. Heat To Low Boil And Stir Until Smooth. 2. Beat Egg In Cup, And Stir Into Vinager Mixture Slowly As It Boils To Thicken.

Are you thinking of Dirty Rice? Tiy might try this: INGREDIENTS: 1/2 to 1 pound spicy bulk pork breakfast sausage 1/4 cup minced onion 1 3/4 cup chicken broth 1/2 cup long-grain rice 1 tablespoon fresh minced parsley or 1 teaspoon dried parsley flakes salt and pepper PREPARATION: Brown sausage in skillet until no longer pink, breaking up with fork. Add minced onion and cook 2 minutes longer. Pour off most of the excess fat. Stir in broth and rice. Simmer gently, covered, 18 to 20 minutes or until rice is tender and most of broth is absorbed. Are you grinding your own turkey or purchasing ground turkey burger to use? Something that might make a difference is the grind (fine - coarse) of the meat you are using, or try grinding turkey thighs yourself (thighs have more flavor, imo, and more like the color of pork sausage). For seasoning, you might try some of the offerings from Penzeys. I like the Breakfast Sausage Seasoning (https://www.penzeys.com/catalog/product.aspx?catalog=24&product=606), but I make a mild sausage since I can't eat things high in fructans (onions, garlic, etc. - so avoid mixtures with those in them). If you scroll the Penzeys page down you will see some other sausage mixtures. We also have a local meat processing plant that has some good spice mixtures for sausage. What I found we like is using a coarse grind of low-fat turkey breast. After I get it all mixed and flavored for sausage, I let the flavors meld in the refrigerator for a few hours, then I cook it in a scrambled fashion, not patties. The cooked scrambled turkey burger sausage can be used as a topping on pizza or added to egg dishes, and even reheated in a pan to serve with breakfast. I always keep it in user-friendly amounts in the freezer. Hubby liked it scrambled, but not as patties. Even the Honeysuckle Turkey Sausage he liked scrambled better than patties, so scrambled it is, if it gets him to eat it ;-). -Grainlady

Spinach balls are what I see around here -- once with a really nice hot mustard dipping sauce. I've never had a sausage ball like you describe!

Glenda, I saw a recipe using the dried cranberries in my search and thought it sounded good. I'd love your recipe.

My version of cranberry sausage balls

l pkg Maple Flavor Jimmy Dean Pork Sausage You can use mild or hot, but I like the maple flavor
2 cups all purpose baking mix
2 cups shredded sharp cheddar cheese
1 tsp ground allspice
3/4 cup or less of chopped dried sweetened cranberries
1/2 cup chopped walnuts/pecans
Preheat oven to 350.
Mix the baking mix, cheddar cheese and ground allspice first, then with your hands mix in the sausage, cranberries, pecans. It takes a while to work in the cranberries and pecans.

Shape into 1 inch balls.
Place on ungreased baking sheet, ***I use parchment paper and recommend your using.
They baked in my oven 20 minutes and came out perfect. Bottoms will be browner than the rest.
Note: Cheese Balls may be prepared ahead and frozen uncooked. To bake from frozen: thaw on cookie sheet 15 minutes; bake in preheated oven 20 to 25 minutes

They were delicious in their unusual way. The maple sausage and the allspice is what made it extra good.
In comparison with the regular sausage balls, all I can say is they are different.

Glenda, I just want to make sure of one thing, there's no liquid in this recipe? Like 1/3 c milk or whatever to mix in the baking mix?

No liquid :o) Just follow the directions. Hope you enjoy as much as everyone here, does.
