Comments (8)LindaLou, I always make my own sausage now, Elery and I have also smoked our own bacon, made pastrami and smoked those ducks! I like italian sausage more than I like breakfast sausage, but here's the recipe I use when making breakfast sausage. The spices can be adjusted to taste, I mix the seasonings in with the meat, cook a tiny bit and then adjust to add more of whatever seasonings I like. It's usually a bit more sage and a bit less red pepper. 2 teaspoons dried sage 2 teaspoons salt 1 teaspoon ground black pepper 1/4 teaspoon dried marjoram 1 tablespoon brown sugar 1/8 teaspoon crushed red pepper flakes 1 pinch ground cloves 2 pounds ground pork (or use turkey or chicken) Mix all ingredients and cook! I have one that takes apples too, the kids really like it although it's a bit sweet for my taste. It's from, I think, Better Homes and Gardens. I like it better as a sandwich with some honey mustard than I do as a breakfast meat. Apple-Turkey Breakfast Sausage. 1/2 pound ground raw turkey 2 tablespoons soft bread crumbs 1/2 cup shredded apple 1/4 teaspoon dried sage, crushed 1/4 teaspoon pepper 1/8 teaspoon salt 1/8 teaspoon paprika Dash ground nutmeg Nonstick spray coating In a large bowl, combine turkey, bread crumbs, apple, sage, pepper, salt, paprika, and nutmeg; mix well. Shape mixture into four 1/2-inch-thick patties. Spray the unheated rack of broiler pan with nonstick spray coating. Arrange patties on rack. Broil 4 to 5 inches from the heat about 10 minutes or until an instant-read thermometer inserted in side of patty registers 165 degrees F, turning once. Comments (18)Trudy: " Traditional " is my favorite way also. Thought everyone went to Salting , High Heat method. Nice to see I'm not alone. I usually make mine with Stuffing, sometimes with chopped up and simmered Sausage mixed in it. Stuffing ( Double for Turkey ) 1 Celery stalk, (10in. Piece ) and ½ of a Med. l onion (chopped small) and Cooked in Micro Wave until tender (about 2 ½ min.) Some Bell Pepper may also be added. In a large Bowl mix: 1 cup of small bread cubes 2 cups of Italian Bread crumbs 1 tablesp. Parsley Flakes 2 tablesp. Of Locatelli Romano grated cheese 1 teasp. Of Onion Powder 1 teasp. Of Garlic Powder ( or more to taste ) 1/2 teaspoon of Old Bay Seasoning Salt to taste ( about ½ teaspoon ) Optional- 1 piece of Italian Sausage 10 in. long, skinned and cut into small pieces. Sautee till medium rare. Add the cooked Onion and Celery. Put 1 egg into a cup of chicken stock , or Chicken Soup Base ) beat well and mix this into the other ingredients. Add a little water, if the mixture is too dry. Add more sausage or whatever you like. Baking the Turkey: I use a Waterless cooker and Bake until the inside stuffing temperature reaches 165 Degrees. Take the lid off for the last 1/2 hour , to brown. I just rub oil on the turkey and sprinkle with Onion and Garlic Powder. Put 1/2 cup of water in the bottom and let her rip. Always Good !!! Alexa ******************************************************** New England Biscuits with Cranberries and Rosemary 2 cups flour 2 ½ teaspoons baking powder 2 teaspoons sugar 1 teaspoon salt 5 tablespoons cold unsalted butter, cut into small pieces ½ cup dried cranberries 2 tablespoons minced fresh rosemary, finely chopped 1 cup buttermilk 1 egg, lightly beaten Preheat oven to 400 degrees. Spray a baking sheet with cooking spray or line with parchment paper. In a food processor, combine the flour, baking powder, sugar and salt. Pulse to combine. Add the butter and process until the mixture resembles coarse cornmeal. Place the mixture in a large bowl. Stir in the cranberries, rosemary and buttermilk. Mix well. The dough will be sticky. Transfer to a floured work surface. Dust your hands with flour and knead the dough 10 times or until smooth. Pat into a round about ½ inch thick. Using a 2-inch round biscuit cutter or drinking glass, cut out biscuits and place on the prepared pan. Gather the scraps and repeat until all the dough is used.
