Does anyone have any suggestions for me on this? I have a pint+ of whipping cream in my fridge that is beginning to have a sour taste. How can I use this? It is about a week beyond the expiration date.

Check the sell-by date on the container of whipping cream. Whether opened or unopened, as long as it has been refrigerated continuously, whipping cream should be good for three or four days past the sell-by date by conservative estimates -- some sources say up to one week. However, if you've already whipped the cream, it only lasts about a day in the refrigerator.

Step 2
Use your senses to inspect the cream. If you see signs of curdling or lumps, or if you smell a sour odor, the whipping cream has gone bad. Homemade whipped cream made from liquid whipping cream will begin to deflate and re-liquify, separate or turn yellow when it expires, in addition to curdling or developing a sour odor.

Step 3
Keep your whipping cream refrigerated continuously to prolong its life, and consider freezing it in an airtight container if you won't need it soon. To successfully whip frozen and thawed whipping cream, shake the container thoroughly to re-emulsify the butter fat. To freeze homemade whipped cream, spoon it onto a baking sheet in individual mounds, freeze and then transfer to an airtight container.

If we can have a sour cream angel cake, why not sour cream & *chocolate* angel cake? Hmm... now that I think of it, that does sound good with the cinnamon swirl. This is information from The Cook's Thesaurus (link below): Substitutes for one cup sour cream: Blend one cup cottage cheese plus two or three tablespoons milk or buttermilk plus two tablespoons lemon juice OR blend equal parts cottage cheese and plain yogurt OR blend one cup cottage cheese plus one-third of a cup buttermilk plus one tablespoon lemon juice. (Adapted from directions in the Joy of Cooking by Marion Rombauer Becker and Irma Rombauer. See my sources.) OR blend one cup cottage cheese plus two tablespoons lemon juice plus two tablespoons fat-free mayonnaise plus one-fourth cup nonfat buttermilk (adapted from a recipe in the New Laurel's Kitchen Cookbook) OR Combine 7/8 cup buttermilk or yogurt plus three tablespoons butter or margarine (From a Gateway Virginia recipe. OR one cup buttermilk OR one cup well-drained yogurt (if making cheesecake, use whole milk yogurt) OR one cup sour milk OR let stand for 5 minutes: one cup evaporated milk plus one tablespoon lemon juice or vinegar OR jocoque OR smetana (lower calories) I would caution when cooking with yogurt \- it will separate if allowed to boil. Interesting, Sooz, about the frozen berries and color. I can imagine how that would do it. Writersblock, you've inspired me! I would want it to taste like dark brown sugar to be worth giving up pretty pink for, and I've worked enough with organic raw sugar to know it will go beige and not have enough of a punch. ... But! White sugar and just enough black molasses to give it that brown sugar taste might work. That's as a ribbon. If it stays as a ribbon, the ice cream would still be pretty pink. It might need to be reduced first. This is sounding interesting. :) Thanks, again, Sooz!

Trying to sour cream that has been processed by a dairy may not be a good idea. An inhibitor is often added by processors to milk products to lengthen its 'fresh' time. This inhibitor works against the natural bacteria based souring agent, and when the milk product begins to go 'bad', it may be based on a fungal agent rather than the natural bacterial one. The resultant product can be a disaster.

Good sour cream or sour milk is made from cream/milk that has no inhibitors. 'Starters' are often used. This is a bit of material from a former batch that had desirable features.

Personally, I'd toss any commercial milk product that has begun to spoil (unless I knew more about certain details).

I only use "soured" raw milk or cream. Never processed milk or cream.
I have several "sour" cream recipes from my grandmother. My mom was raised on a dairy farm.

Throw it away and buy a new carton. Why risk your health for a dollar or two????
