Please help with kichen light remodel 8 foot ceiling

Any help appreciated! We are updating a 1980's chalet in the mountains. It is 2-story with 8 foot ceilings. My question is about the kitchen. Presently there is a 4-bulb, 4-foot fluorescent in the center of the room and a light over the sink.
I've planned two lights over the 5-foot no upper cabs sink area, but am stumped how to proceed. I would like to put a flush-mount fixture in the center of the room for general light and interest. There will be undercabinet lights on all upper cabs. I would like to put a can or pendant light on the 3-foot section with no uppers noted on the lower left of the attached file.
I have attached my cabinet layout. The room is roughly 13.7 long x 11 wide galley open on left to dining. There is a wall/door on the right to laundry (pantry closet is on that wall).
I would like to put as few recessed cans as possible.
