Annie's White Bread (Grandma's Recipe)

Annie, I have to let you know I tried your recipe and it was so-so-so delicious! I've looked for a white bread that we would like for many years. Today I came across yours. Its fantastic! I made it in my bread machine. I just can't knead bread anymore and can't see leaving the bread machine sitting on a shelf. I wound up with a very tall loaf and it was very tender with a great taste and a perfect crust. I usually use the bread machine for all the mixing, kneading and rising then bake in the oven. That's what I'll do the next time which will be tomorrow or Monday. Thank you so much for posting that recipe.

By the way, we finally got good news on my husband's cancer. After many surgeries, they finally got rid of all those mutant, rapidly growing cancers and they didn't have to do an entire scalpectomy. They still don't know what triggered them or much of anything else about them because no one had ever seen them before and we do have top doctors. They were ready to tell him he was terminal, but now says he has a lot of good years ahead of him. He's now bald and plans to stay that way which I definitely like. One of the ladies at church who just turned 85 got to meet him a couple of weeks ago and informed me I have an extremely good looking husband. Not that I'm prejudice, but I have to agree with her. I'm thankful for my miracle.

First, I am ecstatic to hear about your husband and his health improvements. Thank goodness, he's been in my prayers all along, so I'm happy. Not nearly as happy as you are, I'm sure.

The bread recipe is a good one, it's one of those old farm recipes from when everyone had milk and eggs and butter to use up but it's my family's favorite too. I always use the bread machine to mix/knead/rise, then just shape the rolls or loaves and bake in the oven, it works great.

In fact, the Monkey Princess and I just baked a couple dozen today, they'll be for sandwiches for Madison's birthday party tomorrow. Hard to believe she's 3. (sigh)

Oh, Annie, I can't believe how big Makayla is getting!! What a beauty! I have pictures of Chelsea (DD), around 2 years old, kneading bread dough by hand. She was up to her eyebrows in flour - it's one of my favorite photos of her. Gavin (GS), has sent me some of his artwork from NY. His "pieces" are also on the fridge, holding court over the kitchen. Chelsea laughs when I tell her I'm going to have them framed! I love that Makayla is helping you can! You're building a wonderful bank of memories for her - that's so great!! Lori :D

yes, Beachlily is right, that was a problem from the first time I posted the recipe and forgot to add the egg! I corrected the recipe but that old mistake just keeps coming back to haunt me! It's Elery's favorite bread and I made it just like you did, I let the bread machine do the work and then shape it and bake it in the oven. I've never made it without the egg, though, that's good to know in case I have a day when I'm out of eggs, so thanks for doing that "research". Now I don't have to. (grin) I have occasionally added half a cup of orange juice in place of some of the liquid, it gives a nice flavor and adds some acidity. Some people think whole wheat bread is bitter (although I love it) and the OJ seems to cut that. I think Grainlady also gave the scientific explanation of why to add citrus juice or acidity to bread dough, although the short version is that yeast likes an acidic environment and so the OJ creates an environment that yeast loves to grow in. You could actually do the same thing with a pinch of ascorbic acid (vitamin C) or a tablespoon of vinegar, but I like the orange flavor sometimes. Anyway, I'm glad you like it! Annie

I've not made that recipe....but I would just let it rise, punch it down rest 10 minutes and shape... Either free form or loaf. Will you be doing it by hand? or in a mixer or processor? When I make beer bread I just use room temperature beer, and either it's flat ( like from the bottom of a keg) or I make it flat by pouring it from glass to glass....as the "head" makes it hard to mix. But I can't imagine hand kneading dough with velveeta cubes in it....sort of a texture thing....and I don't think that kind of cheese grates well at all....so I would use all grated chedder and add it with the flour.

3 3/4 cups white flour 2 packages of yeast....or 4 1/2 teaspoons 1 1/2 tsps salt... Zap....until mixed....then slowly add 1 1/3 cups of water throught he feed tube with the motor running until all is moxed....may need to add a tablespoon or so more water....depending on the flour. Let the processor run about 30 to 45 seconds Knead about 3 times, cover and place inw arm place to double... Beat down, shape, rise then bake 375 for about3 5 minutes...if shaped in a baton....longer if a boule.
