Annie's Chili con Carne Recipe #1: (Serves 4-6 people or two hearty eaters) Ingredients *1 lb of ground Beef (if you use extra lean, add 2 Tbsp of olive oil to the browning meat). (see notation below) * 3 large Garlic cloves chopped (Abt. 1/4 cp. chopped). * Abt. 1/4 to 1/2 cp Chili Powder. * Ground Cumin (Heaping amount - or to taste) * Ground Paprika (ditto). * 1/2tsp - 1 tsp. Red Chili Powder (to taste)- mix in some Red Pepper flakes for Extra Extra Hot. * 1 can of Red Beans (drained) or Light Red Kidney Beans * 1 can of Pinto Beans (drained) or 1 pt. of your own cooked pintos. * 1 can of Rotelle Tomatoes & chilis (juice too). * I pint jar of home canned Diced Tomatoes or 1 can (juice too). Salt & black pepper to taste. Note: Adjust the spices and garlic amounts to your taste. I like it HOT, and sometimes I even add chopped Jalapenos and/or fresh green chilis out of the garden for "Annie's PURE HELL Chili #2" and/or "Annie's Fire and Brimstone Chili #3", in that order. Whatever you! NOTATION: You can also brown skinned & boned "pollo" (chicken meat) in a little Xtra virgin Olive Oil, chop it and stir that in, or add browned, sliced or chopped Summer Sausage to the mix. Adding a little Servesa (beer) to the soup is good in the Summer Sausage recipe #4. I use Dos Eqis XX beer. :) Chicken Chili (Chili con Pollo) is good for my "Annie's Chili con Pollo Loco #5". You can use venison too. But chili is not chili without beans, not matter what anybody says. How To: 1. Brown ground beef in a large heavy skillet or kettle - it needs to brown really well. 2. While that browns, peel and chop garlic cloves. 3. Add garlic to browned meat. Turn off heat (set off burner if you have an electric stove). Allow garlic to saute in the hot meat and fat. 4. With medium heat, Stir In all the spices. Return to heat and caramelize well. It will be dry looking. ** NOTE: This is the most important step for authentic chili flavor. It cooks and coats the spices well into the meat. 5. Now, Add in the Rotelle and the diced Tomatoes, with juices. Stir mixture well. * Reduce stove temp to simmer at this point. 6. Add Beans. Stir until well coated with chili mixture. 7. Cover and simmer on lowest heat possible for at least 30 minutes (longer is better). The longer it simmers, the more chili flavor it will have. Stir occasionally. You can add a little more tomato juice or water if you like it thinner, but it really should be thick. It's ready when you are! That's it! When reheating, I add a tiny bit of water to pan - then add in the leftover chili con carne and stir. This will prevent scorching your chili. I like it served with fresh made, hot Indian Fry Bread dipped in Honey, but Cornbread is great too; hot tortillas, or crackers or tortilla chips. Whatever you like! Garnishes - served in little bowls for guests to help themselves: Sour Cream, Cheese, Sliced or Chopped Black Olives, Fresh Pico de Gallo, Jalapeno slices, Chopped Green Onions, Chopped Cilantro, Chopped Fresh Tomatoes. ----------------------------------------------------- ~ Annie <:>

Linda, If you want to convert a bread machine recipe to a made by hand recipe, try this: in a bowl - put in the water or other liquid called for add in the yeast, whisk to dissolve, let sit 5-10 minutes to "proof" the yeast and made sure it is viable add any sugar, honey, maple syrup or other sweetener called for in the recipe, stir well add half of the flour called for in recipe, add salt and mix well, stirring with a strong spoon or heavy duty whisk also add in any dry herbs or spices now add in any butter, oil, or other fat called for - if melted butter, make sure it is only just warm, not hot - add in any egg(s) listed in recipe add in rest of flour and any other ingredients, chopped herbs, nuts, dried fruits, cheese, etc. stir well with spoon or mix with your hands until dough is a rather shaggy mass turn out dough onto a clean, floured flat surface and knead for 8-10 minutes adding only small sprinkles of flour if the dough sticks to your hands and the kneading surface [if you forgot those nuts, cheese, or raisins, you can knead them in now] when dough has been kneaded sufficiently it will come together into a nice firm ball (rather than a shaggy mass) and spring back when poked with a finger grease or oil a large bowl (or use the one you mixed in), put dough in, turn it around in the oil to grease the top of the dough and turn it oiled side up in the bowl; cover with a bowl cover (shower cap type), plastic wrap, or wax paper, then cover with a clean kitchen "tea" towel (dampened with hot water if you are making whole wheat bread) and set the dough to rise until doubled in bulk turn out dough, knead 2 minutes, divide into portions according to recipe or not - form loaves and put in greased loaf pans or not - cover again with wrap, and let rise until doubled in bulk preheat oven, bake bread until done, let cool at least a few minutes before cutting - and enjoy!

You can use the remaining beer in a marinade, like below (source), or I would make 'beer can chicken' - put a whole, seasoned chicken, propped upright, on the grill, 'sitting' on a partially filled beer can (put two more church-key holes in the can). Beer Marinade & Barbecue Sauce Yield: 3 3/4 cups 2 med. onions - minced 2 cloves garlic - minced 1 cup barbecue sauce 1 cup ketchup 2/3 cup beer 1/4 cup honey 2 Tbls. lemon juice 2 Tbls. red wine vinegar 2 Tbls. Dijon mustard 1 Tbls. Worcestershire sauce 1 tsp. hot sauce 1/2 tsp. ground black pepper -Combine all ingredients and coat your favorite meat with marinade; allow to stand at room temperature for up to 2 hours or in refrigerator overnight. -Remove meat from marinade; set aside. -Bring marinade to a rolling boil over medium high heat, then reduce heat to low and simmer for 10 minutes, or until thickened. -Use as sauce for basting or serving with grilled meat.

I've read it is not good for cheesecake but I don't make cheesecake anyway. I have seen recipes for cheesecake using it in Cooking Light magazine, but I dunno if the recipes are any good. Probably not good in danish and the like either. I use it mostly to spread on bagels and toast and english muffins, in which case it tastes just fine. I top it with a dab of homeade jam, yum. Great with lox, since that has a strong taste so I don't miss the extra taste for that application. Fine with those dream eggs, because they were flavored with the herbs anyway, and the neufatchel just added a wonderful creamy texture, even with 1/3 less fat. Since cream cheese is almost pure fat, 1/3 less doesn't make it a diet food by any means, but I like it just as well if not better than cream cheese for what I use it for, so that's what I buy for the calorie savings. I don't mind it in party spreads either. I just dumped it out and spread the jelly on the bottom, no one notices because it’s covered with jelly!! I use my own home canned Habanero Gold to make this stuff, and I'll be making 8 or 10 of them for that wedding in May. Somehow I just know I'm going to be eating some of them myself, and I'm going to experiment with making one with a fruit jam instead of the hot pepper jam and see how that works, the bride wanted something "sweet", she says "only the guys will like the hot stuff". HUH? I love it and I'm sure not a guy! DH and I went out today on a chicken coop tour of East Dallas. (which was lots of fun, but a whole nother topic) Then I had to clean the kitchen in order to cook in it. But, my little grandson (a month away from 3 yrs. old) and I did get started on Nate's carrot cake cookies, but since we didn't finish making the dough until an hour before his bed time, and the dough has to chill at least an hour, it'll be tomorrow before we bake them and do the cream cheese part. It doesn't matter. Both DGS and I had a great time mixing up the batter. He got to taste the flour, the sugar, the butter, and all the other ingredients as they went into the mix.
