As I mentioned in "What's For Dinner", my mother came over for lunch yesterday. We had one of her favorites, frog legs. Amanda came over with the kids and because it was too cold to swim, Makayla decided to teach my mother how to bake Frisian bread in the bread machine.

She carefully read the recipe and measured all the wet ingredients into the bottom, added the flour and explained that "yeast and salt are not friends" and they "need separate rooms". She showed mother how to make two little hollows in each end of the pan, to keep the yeast and flour separate:

She showed Mother which buttons to push, and after the dough was finished, how to shape the loaf. She's not allowed to use the oven without help, so I put the risen loaves into the oven and they came out looking like this:

Mother took one home and Makayla took the other home for breakfast this morning. I'm sure my mother was very appreciative of the baking lesson, LOL.

And she will never ever forget that "yeast and salt are not friends"....and great grandma will savor every bite of that bread!
Now....when are you going to teach her to can??
And I remember when you were stressed out thinking the word Grandma didn't apply to you!

Oh, that is so sweet. Makayla is such a pretty little girl and a good cook also. I bet Great-Grandma loved the baking lesson!

Unfortunately, bread machines use the direct dough method (the fast modern method) to make bread, and thereby you miss many aspects to increase "flavor", which is why I try to use the sponge method, especially with 100% whole wheat bread. The sponge in "Mildred Bread" can be as little as 2-1/2 hours, but I generally let it sit overnight for convenience. I also get some additional flavor by using homemade kefir, which is a fermented dairy product similar to yogurt. Yogurt and buttermilk also add a lot of flavor and tangy taste. A standing period is a valuable step to the texture, as well as flavor. The loss of flavor is even more prevalent if using the Quick (1-hr.) Cycle. Another way to add flavor is to remove the dough from the bread machine as soon as the kneading is done and retard it in the refrigerator. Pan it and bake it in your regular oven. "The cold forces the yeast into dormancy so it is no longer gobbling up all the available sugars. The bacteria then can feed and produce some of their flavorful acids, which add subtle complex flavors and enhances keeping quality." When it comes to adding vital wheat gluten, I personally don't use it unless there is a high ratio of low-gluten or gluten-free flour in the recipe. Too much gluten will make the bread tough, so "more" isn't necessarily "better". There is more than enough gluten in most whole wheat flour milled from hard wheat (winter or spring varieties) and even all-purpose flour, to make a great loaf of bread without the additional gluten. The rule of thumb is to add 1 tablespoon of vital wheat gluten for every cup of low-gluten or gluten-free flour that is being used in your recipe. Bagels and pizza dough can also benefit from the added elasticity of high-gluten flour, but it's not necessary if you are using high-protein bread flour. -Grainlady

We have an antique Crawford Royal but the kitchen was totally renovated and with insulation and new windows, it gets too warm to do any baking. Since my mother-in-law used hers a lot, my husband wanted one, too. There's a slot at the top of the firebox which allows him to insert a grill basket for steak, chicken breasts, fish, etc. He has the fire figured just right, a good bed of coals, and does a great job of grilling. We also heat with a wood furnace in the cellar so the stove gives some extra heat. When it's just cold in the morning we don't need to keep the wood furnace going but the stove takes the chill off the kitchen. It's great to have the extra cooking space for big family dinners. Also, I think nothing of steaming brown bread or keeping a soup simmering because the stove is already in use. I am not using extra electricity (we have an electric stove). I use the warming shelf for yeast doughs. I don't think food tastes different except the grilled meats. It's just nice to have the stove.

Lou, is braided bread Cardamom Bread? I braided that for Easter. Boy was that good! Theresa, I was looking at potato flour the other day but didn't buy any. I love potato rolls! I don't have a microwave cover. Finding a warm place in my cold-ish house has been a problem, but I accidentally discovered this "trick": I keep my cast iron pans in the oven; I had been removing the pans, heating the oven for 30 seconds before putting the rising bowl in. When I forgot to remove the pans, I think the oven stayed warmer longer. I've been leaving the pans in the oven ever since. And I love the idea that I was "ripening" all these years, p111og. Tricia, I've been adding wheat germ to almost all my breads. I have made oatmeal bread, too. I've added sesame seeds to some, caraway to others - not the kind you mean, I know, but I'll get to that. I'm going to have to work on keeping the serving size down. Nuts! I have two loaves of Honey Whole Wheat rising right now! I remember a while back there was a thread about keeping bread fresh in linen bags. Lou, you may have made some, but I could be wrong about that. My question: How long do linen bags keep bread fresh? I really like the idea of baked apple French toast - it sounds a bit like a combination of bread pudding and Apple Betty. Who created the recipe? I would like to try making it, and I think that baking is better for French toast so that all servings get done at the same time. Maybe I will have my own apples to use this fall. You're lucky that you get time off for Spring Break - I did not have that when I was in school. In Texas, schools did not have Spring Break bakc then so that the school year could end earlier in May, before it got to be too unbearably hot. Now they have more air conditioning. Oatmeal cookies are one of my all time favorites, and I used to make them with granola and chocolate chips. The granola made them more crunchy, but I had to reduce the amount of sugar because the granola was sweet. What do you like to add to your oatmeal cookies? Lars

Heck, she can bake bread with a broken arm! She's breaking up the sugar cubes for the Frisian bread, and that's why she likes it so well, it's that whole cup of broken sugar cubes. (grin)

Oh....that is some very special bread! What a sweet little "grown-up" you have there, Annie! She is such a cutie!

This is the stuff that makes for great memories, for both young and old(er)....heehee.

Oh Annie! I have a tear in my eye over seeing that child. She is growing up so fast and such a beauty.

I know that GGrandmaw appreciated the lesson and every bite of the bread tasted wonderful.

My Maggie has been on vacation for 2 weeks. They come home tomorrow and I can't wait. I'm having Grandmaw withdrawls.

Oh and Annie, your fridge front looks like mine ;-) 1st picture!

RR, here's what's on my refrigerator right now, from Makayla:

Believe it or not, my Mother is not much of a cook, so she was impressed with the lesson. She doesn't bake bread at all, so she appreciated the loaf too.

Dang, maybe she can teach ME how to make a good bread. I still am challenged by bread dough. Dont ask why, I just am.

Oh, Annie, I can't believe how big Makayla is getting!! What a beauty!

I have pictures of Chelsea (DD), around 2 years old, kneading bread dough by hand. She was up to her eyebrows in flour - it's one of my favorite photos of her.

Gavin (GS), has sent me some of his artwork from NY. His "pieces" are also on the fridge, holding court over the kitchen. Chelsea laughs when I tell her I'm going to have them framed!

I love that Makayla is helping you can! You're building a wonderful bank of memories for her - that's so great!!

How very special. My mother thought bread came from the store. I didn't make anything with yeast until I was an adult. My granddaughter sees us and her parents make challah, sour dough bread, pizza dough, pita and naan.
