"Simply Potatoes" brand of fresh shredded hash browns for latkes

I buy "Simply Potatoes" brand of hash brown potatoes in the refrigerated section of the market. The are all shredded, dry and latke ready. I use them in Chicagoland and bought them here in Tucson. I guess they are distributed nationally. One time, back in Illinois, the store was sold out so there is a following.

Here's the recipe using them that I got from the Chicago Tribune some years ago. We love these crispy, non-greasy, uber-tasty treats.

1 lb. hash browns, Simply Potatoes brand

1 med onion, finely diced

2 large eggs

1/3 cup flour

1 t baking powder

1/2 t black pepper

1/2 table salt

5 T canola oil, or as needed

Mix all ingredients except oil in a large bowl until thoroughly combined. Heat oil in a large skillet til hot. Working in batches, drop large spoonfuls of potato mixture into the oil; fry, turning once, until golden brown on bothsides. Serve warm w apple sauce or sour cream.

Note: The package contains 20 ounces and yet the recipe says a pound. No matter.

Delicious and easy. Yes, they are fresh potatoes.
