Cookies Are Done!

Hi everyone,

We just finished making our Christmas cookies today. We also gave some to our neighbor friends around here. We made six varieties:

Peanut Butter (the crisscross kind you make with a fork)
M&M
White Chocolate Chip (same batter as the M&M)
Sugar (mom's one cousin's recipe that we've been using for years)
Date (a pinwheel cookie-they take the longest (2 days), since the first day you make the dough and filling, roll up like a jelly roll, chill overnight, and slice and bake the next day)
Lemon Bars (my contribution)

Merry Christmas and Happy Winter Solstice (AKA Yule) to you all! Time to move on to start my Winter Sowing shortly!

Merry Christmas, Brad.

I've baked some cookies for Elery's family party, which was on the 13th. Madi and I made a few, but we ate them. Now I need to bake more for my family's party on December 28.

I also make the peanut butter cookies, sugar cookies with frosting and those date pinwheels, they're one of my favorites, along with lemon bars.

I gotta get baking!

Strange thing is my netbook and office desktop work fine, no backbutton problem. All had the same updates and version FF. Tried my husbands laptop and it works fine - same updates. All run XP. Nothing different that I can tell. The problem continues on my home desktop. I can't figure out what the difference would be. I don't think its the mouse as I use a wireless MS mouse. Jane

What baking have you done so far for xmas?

So far I haven't baked any thing. I will for sure make Wedding Cakes and Spritz. A couple more after I look through my recipes and decide which ones to make. Susan, if you check back in here, I have a question about freezing your pecan pies. I'm thinking you pour the filling into the crust and freeze it; not freeze just the filling, right? Sounds like a great idea. Think I will try that. Thanks for the idea. Sue

LouAna is solid until the ambient temperature gets warm (above 70°F), and then it softens, and eventually liquefies around 76-77°F. That's how you know it wasn't hydrogenated. Depending on the recipe I use coconut oil in, as well as what type of fat I am substituting, I will usually use it in equal amounts (at least the first time I make the recipe), or up to 25% less. "It just depends" isn't a good qualifier, but it just depends.....(lol) After years of using coconut oil as my primary fat for cooking/baking, my experience is what I depend on. Here's a recipe using coconut oil and butter (and toasted coconut, which could be omitted): http://homecookingmemories.com/coconut-snickerdoodles/

I haven't yet since its a brand new oven and I assumed it should be accurate from factory. But oven temp being off shouldn't affect hot spots, should it?

The date pinwheels sound delicious.

I took a break from baking. I couldn't decide whether to bake Polvorones or Sugar Cookies for Santa. Then, I realized, I'm a grown woman, still baking for Santa.

So, Sugar Cookies it is.

Happy Christmas!

Thank you, everybody, but there will be no pictures of any kind for a while until I can find and figure out a camera that works with my laptop.

We started last Wednesday with the date cookies, baked those and made the PB batter on Thursday, Friday was the white chocolate chip and M&M, Saturday was the sugar cookies, and yesterday was the lemon bars. Mum did almost all of the work.

Good luck and happy baking to you all!

You're ahead of me on baking cookies, Brad. I've sloughed off this year since I won't be hosting a big Christmas dinner and we aren't going out to anyone else's. You made such a good variety of cookies that there should be a type to please most any person. I love the date cookies as well. I do have to get a batch of the Peanut Butter Buddies made for my furkid and to share with one of the little boys at church and the organist's son's service dog. They are easy to make and humans can eat them, too.

Merry Christmas,
Madonna
