Comments (12)Suggested flour measurements in recipes are only good guesses, and those measurements, no matter HOW exact, can't take into consideration the amount of gluten (which soaks up the hydration) and the amount of moisture in the flour (generally higher in the spring/summer and dryer in the winter), which will alter the amount that is ACTUALLY necessary. Both gluten and moisture will change from bag-to-bag and brand-to-brand. You need to go by the "feel" of the dough and it's beneficial to do a baked cookie test. Just as when you bake bread you hold back a portion of flour until you know whether you need it to achieve the proper "feel" of the dough.
