It's always nice to thank members who've recipes we try.

WC, I made your creamed onions last nite. We couldn't find gogonzola so subbed blue cheese.

We love this!!! Rich and creamy, a special occasion vegetable dish for sure. Thank you for posting your recipe.

Creamed Onion Gratin

2 medium yellow onions, cored and quartered lengthwise
1/4 cup olive oil
Kosher salt and freshly ground black pepper, to taste
2 tbsp. unsalted butter
2 tbsp. flour
1 cup heavy cream
1/4 cup dry white wine (I used a Riesling)
Freshly grated nutmeg, to taste
1/2 cup finely grated parmesan
3 oz. Gorgonzola, crumbled
1/4 tsp. paprika

Heat oven to 350. Toss onions with oil in a 9Ã¢ÂÂ³ x 11Ã¢ÂÂ³ baking dish and season with salt and pepper. Bake, stirring occasionally, until soft and lightly browned, about 1 hour; set aside. Heat oven to broil.

Heat butter in a 2-qt. saucepan over medium-high heat; add flour, and cook, stirring, until smooth, about 1 minute. Add cream and wine, and cook, stirring, until thickened, about 5 minutes. Season sauce with salt, pepper, and nutmeg.

Pour sauce evenly over onions. Sprinkle with parmesan, dot with Gorgonzola, and sprinkle with paprika; broil until cheese is melted and golden brown on top, about 2 minutes. Serves 6 - 8

I think I may add this to the Christmas menu but would like to use pearl onions. I don't see any reason why not, what do you and WC think?

Jasdip, why do the onions need to be cored? The recipe sounds incredible, but I wonder about that one directive.

I agree with Dave. If there is any doubt about whether you added the vinegar, into the fridge it goes, it cannot be canned safely without it. I pressure canned the first batches, but my ultimate goal was to make a salsa that was safe to waterbath can. So, although I am/was confident in using the pressure canned version, it was not tested and declared safe like the water bath version was, and even that had some vinegar in it. Better safe than sorry, I'd definitely refrigerate the stuff and use it up, or freeze it. I know someone did that, but I'll be darned if I remember who. And you certainly can use the food processor to chop up the vegetables. I do mine by hand because I can't seem to get nice sized pieces. Either it's puree or the pieces are too big, and my knife skills are pretty good, so I just chop 'em. Manic, I'm glad you like it! Annie

Ahhhh, yes! Good ol' home made split pea soup, One of my all-time favorite 'comfort foods'. I've tried it in restaurants, soup & salad places, etc, But for some reason, It is just never very good. But I do love the home made! My 'recipe' is very simple, kind of like my mother made it. Just the split peas, the ham bone, some onion, a bit of white pepper, (I don't like 'fly-specks' in light colored foods) And a little carrot, grated on the largest grate of my grater, for some color. Oh, and water or chicken broth, of course. We do like it to be sort of thick. So glad you & your family tried it and liked it, Isn't it fun to try new things? well--i'm sure it would have to be somewhat different using whole eggs but based on the size dish i was using (2.8 L), it held about 8 slices of the baguette and i used the equivalent of 6 eggs and stirred in 1 c of milk. at the stated temp, it took about an hour to cook and "poofed" right up over the top edge before it fell a bit while cooling. 'tis history already--ted finished the last of it this morning :)

I cooked the chicken in a large high sided skillet...put the broth and cheese right in after cooking chicken, Just added other ingredients with it. Well...I cooked the pasta alone then added it. Eat when hot. No Baking. I added the tomatoes and onions last so they wouldn't be mushy. I see two other replies....one about wrapping the bacon around the chicken. I don't like to cook the chicken whole...It serves more when cut in chunks and stir all together. I have extra people eating here all the time...so I like it to serve more...But if you are having a dinner for two or 4 and want it to look fancy their way would be nicer I imagine. patti

Chase, I think pearl onions would be great. You could really pile them in the dish. I used a smaller dish, so that they wouldn't be spread out as much. This is a wonderful company dish. These and a prime rib or something, oh my gosh, heaven!

I'm making a roast turkey today and was planning to have the onions with it, but had them yesterday with my pork tenderloin and roasted white and sweet onions instead.

Hi Rhizo! I didn't core them----I've never cored onions. I just cut the onions in wedges, more wedges than quarters. When I was slicing them, I cut off the root end so that they would fall apart. I was thinking that's what the recipe meant by "coring" them.

That does look good!

& maybe 'cored' means cutting out the small root end @ the bottom? IME it can sometimes be about 1/2" deep after cutting off the root end....

Great minds think alike. I am gonna make these for my mom for Christmas dinner. She's always waxing poetic about the ones she had as a kid that her parents made. She's the only one in our family who likes eating cooked onions, but she's 87 so she deserves to get a special dish. I made some last year and they were good but not great, so this is definitely going to get a run this Christmas. The kind I made last year just had parmesean. I might try it with gruyere and a danish blue since my mom is of N. European heritage.

I am so glad you liked the onions and thanks for letting me know; we thought they were sublime and so simple to prepare.

Regarding the "core" question, that stumped me at first, but I determined that what was being referred to as the "core" was the root end - some of the root end can go a bit deep in the onion. Carol and Jasdip figured it out, tool.

I am not fond of pearl onions, so can't make a comment about substituting them.

Hope that others who make this dish like it as much as we do.

It sounds delicious to me too. I would also probably be the only one who ate them, but I love cooked onions.

Maybe Christmas dinner, if it's only Elery and I.
